Easy Almond Tea Cake Cookies
Light and fluffy, with a hint of almond flavor, and a delicate sweetness that melts in your mouth

This recipe makes 4 dozen for smaller cookies and 3 dozen for large. You can also half the recipe if you want less.
- 1 cup butter softened
- 2 cup sugar
- 2 eggs beaten
- 5 cups All-purpose flour
- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp baking soda
- ½ cup milk
- 1 tsp almond extract
- 1 tsp cornstarch
- Powdered sugar
- Optional: 1 tbsp orange zest
In the bowl of a stand mixer, cream butter and sugar until light and fluffy
Add eggs and almond extract, beating well
In a large bowl, whisk together flour, baking powder, cornstarch and nutmeg
Dissolve the baking soda in the milk
Alternate adding the flour mixture and milk, beating well after each addition
Using a large cookie scooper, place the cooke batter on a large well greased baking sheet or with a silicone mat or parchment paper.
Bake at 350 degrees for 15-16 minutes. Remove when they are lightlylbrowned on the botoom
Remove from oven and allow to cool on a wire rack for 15 minutes, and then sift powdered sugar over the top
