Easy Creamy Crockpot Potato Soup
Tender potatoes in a creamy, cheesy seasoned broth

- 5 Yukon Gold or Russet potatoes peeled and diced into 1/2-inch pieces
- 4 cups chicken broth
- ½ small onion finely diced
- 1 tbsp butter
- 1 tsp basil
- 1 tsp oregano
- 1 tsp garlic salt
- Salt
- Pepper
- ½ cup cream cheese softened
- 2 tbsp flour
- ½ tsp thyme
- ½ cup heavy cream or half and half
- ¼ cup white wine optional
- ½ cup sharp shredded cheddar cheese optional
- 2 cups spinach
Add all ingredients except for cheddar cheese into the slow cooker and stir together well
Cook on low for 4-5 hours or high for 2-3 hours until potatoes are soft
Optional: Add in the cheddar cheese and stir together until it's melted into the soup, then cook on low another 20 mins
Stir in the spinach
