Funfetti Jelly Bean Sugar Cookies

These soft and chewy jelly bean sugar cookies are everything you want in a bakery-style cookie—thick, tender, and packed with pastel sprinkles and sweet candy centers.

1 cup brown sugar 1 cup butter softened (2 sticks) 2 eggs 2 teaspoons vanilla 3½ cups all-purpose flour 2 teaspoons baking soda 2 teaspoons cream of tartar 1 cup pastel sprinkles 1 cup mini jelly beans frozen
Preheat oven to 350°F. Line baking sheets with parchment paper.
Place jelly beans in the freezer for 15 minutes.
In a large bowl, beat together butter and sugar until light and fluffy about 2-3 minutes.
Mix in eggs and vanilla until smooth and fully combined
Add dry Ingredients Mix just until a dough forms. Do not overmix.
Fold in sprinkles and frozen jellybeans
Form dough into tall balls and place on a baking sheet.
Refrigerate for 30 minutes.
Place cookies 2 inches apart and bake at 350 degrees for 18 minutes until the edges are set and center still looks soft
Let cookies cool on the pan for 5 minutes, then transfer to a rack.
