Instant Pot Maple Dijon Chicken

This instant pot maple dijon chicken is smothered in a sweet and savory dijon maple sauce and served with rice for the ultimate warm and cozy dinner.

Ingredients
  

  • 1 cup uncooked rice
  • 1 - 1.5 lbs chicken breasts or thighs
  • cup dijon mustard
  • cup real maple syrup
  • cup chicken broth
  • ¼ teaspoon pepper
  • ¼ teaspoon salt
  • 2-3 sprigs fresh rosemary optional

Instructions
 

  • Prepare the rice according to the directions on the package.
  • Add dijon mustard, maple syrup, broth, salt and pepper to a bowl and mix with a whisk until thoroughly combined.
  • Add the chicken to the instant pot. Pour sauce over the chicken. Place the rosemary sprigs in the sauce.
  • Cook for 20 minutes on the "pressure cooker" setting.
  • Once the instant pot cooking time has ended, vent the instant pot using quick release and open the lid.
  • Remove the rosemary stems from the sauce. Serve chicken and sauce over rice.
