I call this recipe Make Ahead Cheesy Breakfast Casserole because in addition to being tasty, it's easy to make and it can be made ahead of time, so it's convenient for special occasions.

Instructions
Set oven to 400 degrees while you assemble the ingredients.
Pour the melted butter into a standard 9x13 casserole dish and use a spatula to spread the butter to cover the bottom of the dish.
Beat the eggs with a whisk and add them to a large bowl with the shredded cheese, flour, baking powder and cottage cheese and Tabasco sauce (if using) and mix throughly.
If you're using add ons (bacon, sausage, onions, peppers), fold them into the mixture.
Pour egg mixture into the buttered casserole dish and bake at 400 degrees for 15 minutes. Reduce the heat to 300 degrees and bake for another 15 minutes. The total cook time will vary depending on the omelet fillings used but be sure to cook until the center of the casserole is no longer runny.
Allow the casserole to cool for 10-15 minutes before serving.
Sprinkle garnish on top (if using)
