Oatmeal Cream Pie Donuts

Ingredients
  

  • 1 tablespoons baking powder
  • ½ teaspoons salt
  • ¾ cup old fashioned oats
  • 3 tablespoons avocado oil
  • 1 egg
  • ¼ cup vanilla greek yogurt
  • ½ cup applesauce
  • ¾ cup brown sugar
  • 2 tsp molasses
  • Cream topping
  • ¾ cup butter
  • 1-1/4 cups powdered sugar
  • ½ teaspoon pure vanilla extract
  • ½ tablespoon milk

Instructions
 

  • Preheat oven to 350º F. Spray donut pans with cooking spray.
  • Combine greek yogurt and water in a bowl, and set aside.
  • In a large bowl, whisk flour, brown sugar, baking soda, oats and salt together
  • In a medium sized bowl combine avocado, oil, molasses and applesauce, then add the yogurt and water mixture, and mix until well combined.
  • Pour the wet ingredients into the flour mixture and mix until just combined. Don't over mix or it will cause your donuts to be tough.
  • Spoon mixture into the donut pan until each one is about 3/4 of the way full
  • Bake at 350 degrees for 15 minutes or until a toothpick comes out clean
  • Remove from oven, let cool slightly and remove donuts from pan onto cooling rack
  • Once cool, top with cream
  • Cream Topping
  • Beat all ingredients together with an electric mixer or stand-mixer on medium-high speed until light, fluffy, and smooth, about 5 minutes.
