Pine Nut Ginger Cookies
Crispy on the outside and chewy on the inside, with warm spices and full of chunks of crunchy pine nuts.

- 1 cup sugar
- ¼ cup blackstrap molasses
- 1 large egg lightly beaten
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp ground ginger
- ¾ cup butter
- ½ cup pine nuts chopped into small pieces
In a large bowl using an electric mixer or stand mixer with paddle attachment, cream together sugar and butter until light and fluffy
Add egg and molasses to the sugar and butter mixture
Whisk together flour, baking soda, cinnamon, cloves and ginger
Add dry ingredients to butter mixture until just combined, then fold in the chopped pine nuts
Refrigerate for 30 minutes
Use a cookie scoop to take a piece of dough of out, roll it into cookie dough balls, and roll in sugar
Place on a baking sheet with parchment paper or a silicone mat
Bake in oven at 375 degrees f for 10-12 or until crispy and cool on wire racks
