Pine Nut Ginger Cookies

Crispy on the outside and chewy on the inside, with warm spices and full of chunks of crunchy pine nuts.

Ingredients
  

  • 1 cup sugar
  • ¼ cup blackstrap molasses
  • 1 large egg lightly beaten
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • ¾ cup butter
  • ½ cup pine nuts chopped into small pieces

Instructions
 

  • In a large bowl using an electric mixer or stand mixer with paddle attachment, cream together sugar and butter until light and fluffy
  • Add egg and  molasses to the sugar and butter mixture
  • Whisk together flour, baking soda, cinnamon, cloves and ginger
  • Add dry ingredients to butter mixture until just combined, then fold in the chopped pine nuts
  • Refrigerate for 30 minutes
  • Use a cookie scoop to take a piece of dough of out, roll it into cookie dough balls, and roll in sugar
  • Place on a baking sheet with parchment paper or a silicone mat
  • Bake in oven at 375 degrees f for 10-12 or until crispy and cool on wire racks
