Simple Healthy Lentil Soup

Tender green lentils, fresh veggies and spices for a hearty, healthy soup

Ingredients
  

  • 2 cups green lentils
  • ¼ cup olive oil
  • 2 carrots - peeled and diced
  • 2 celery stalks - diced
  • 1 tsp onion powder
  • 8 cups water or vegetable broth
  • 1 - 15 oz can - crushed tomatoes
  • 1 tsp basil
  • 1 tsp oregano
  • 3 garlic cloves - crushed
  • 2 bay leaves
  • 1 cup baby spinach
  • Kosher salt
  • Black pepper
  • Fresh lemon

Instructions
 

  • Place the carrots, celery, crushed tomatoes, garlic, and olive oil into a large pot and stir together
  • Add the water or broth, lentils and spices and stir again
  • Bring to a boil and then reduce heat and simmer on medium heat for 20-25 minutes or until lentils are soften. You don't want them to be mushy, but still hold their shape and a bit of firmness.
  • Stir in spinach and a squeeze of lemon
