Super Simple Cherry Brownie Truffles

These Super Simple Cherry Brownie Truffles are so simple to prepare but each bite-sized truffle delivers decadent chocolate and cherry flavors.

Ingredients
  

  • 15 oz brownie mix box To make this recipe gluten-free simply use a box of gluten-free brownie mix.
  • Ingredients listed on the back of the brownie mix. Plus add one additional egg (yolk only) along with the other eggs and instead of water, replace with the same amount of Maraschino Cherry liquid from the jar.
  • 20-25 Maraschino Cherries Drained and patted dry with a paper towel.
  • 12 oz Semi sweet chocolate chips
  • Sprinkles or crushed almonds or rough chopped Andes Mint Jubilee Cherry candies

Instructions
 

  • Prepare the boxed brownie mix according to the directions on the package. Add one additional egg (yolk only) along with the other eggs and replace the water with the same amount of liquid from the Maraschino cherry jar.
  • Once the brownies have been baked, allow them to cool for 15 minutes.
  • Scoop out about 2 teaspoons of the brownies out of the baking dish using a spoon. Wrap a Maraschino cherry in the brownie until it's completely covered and set it aside.
  • Cover a large baking sheet with parchment paper.
  • Once the brownie bites with a cherry center are assembled, prepare your double boiler by placing a heat resistant glass or metal bowl into a pan with about 1 inch of water. Heat the water on medium-low. Place your chocolate in the bowl and stir while the chocolate melts. Be careful not splash the water from the pan into the bowl with the chocolate.
  • Drop a brownie bite into the melted chocolate and roll it around until it's covered. Remove it with a fork and place it on the parchment paper. Add sprinkle topping before the chocolate dries. Repeat for each brownie bite.
  • Refrigerate for a minimum of 2 hours before serving.

Notes

Optional toppings: sprinkles, crushed almonds, chopped Andes Mint Jubilee Cherry
