Two-Bite Smoked Salmon Quinoa Cakes

Ingredients
  

  • 2 cups cooked quinoa
  • ½ cup Panko breadcrumbs
  • 2 large eggs (beaten)
  • ¼ tsp garlic powder
  • ¼ cup grated parmesan cheese
  • Salt and pepper to taste
  • 1-2 tbs olive oil
  • ½ cup whipped plain cream cheese
  • 2 oz smoked salmon
  • Fresh dill can also use dried
  • 1 tsp chopped parsley optional

Instructions
 

  • In a large bowl, combine quinoa, breadcrumbs, eggs, garlic powder, salt, pepper and parmesan cheese and mix until well combined
  • In a large skillet, heat the oil over medium-high heat
  • Take the quinoa mixture and form into small cakes about 1 inch thick
  • Add the cakes to the warm oil and cook on both sides for 2-3 minutes until golden brown and crisp. Remove from oil and place on a large plate lined with a paper towel or cloth to get out excess oil
  • Once cakes have cooled down take a tsp of cream cheese and place on top of each cake, then lay a 1 inch slice of salmon over the cheese.
  • Sprinkle dill over the top of each cake
  • Optional: A squeeze of lemon juice
