Instructions
Line a baking sheet with parchment paper. Make sure that you use a baking sheet that will fit into your freezer.
Slice the bananas into 1/4 inch pieces and spread them out on the parchment paper-lined baking sheet.
Use a small spoon or a teaspoon to drop just enough Nutella or peanut butter to cover the top of the slice (about 1-2 teaspoons per slice).
Once all banana rounds are topped with Nutella or peanut butter, place the baking sheet into the freezer for at least one hour.
Melt the chocolate in a microwave-safe bowl until completely melted. Check on the chocolate and stir every 30 seconds. All microwaves heat differently so be sure to check on it every 30 seconds but this process usually takes about 2 minutes.
Remove the melted chocolate from the microwave and prepare to work quickly because as the bananas warm up, they become difficult to coat in chocolate without falling apart and eventually the chocolate will begin to harden again. Feel free to use a double boiler if you'd prefer to work at your own pace.
Use two forks to roll each banana/nut butter slice in the chocolate until it's fully coated. Place the bite back onto the parchment paper and top each bite with sprinkles and/or crushed nuts before it dries to ensure the topping stays in place.
Place the baking sheet with the bites back into the freezer. Freeze for at least two hours before serving.
Store in a Ziploc bag or airtight container in the freezer.

DIY Double Boiler
When I'm making a large batch I prefer a do-it-yourself double boiler. The double boiler keeps the chocolate warm while you work so there's no pressure to finish quickly to prevent the banana/nut butter slices from warming up and falling apart as you coat them in chocolate. If you use the double boiler, simply remove only a few banana slices from the freezer at a time (instead of the entire baking sheet) and work at your own pace.There's no need to purchase a double boiler as the DIY version works just fine! You'll simply heat a few inches of water in a pan. There's no need to bring the water to a boil, but you do want to make sure it's hot. Place a heat resistant glass or metal bowl into the pan with the water and place your chocolate in the bowl and stir while the chocolate melts.
