Crumbled tofu is sautéed with a delicious Asian sauce, paired with fresh veggies and wrapped in a crispy piece of lettuce, to create these delicious 30 Minute Tofu Lettuce Wraps.

½cupSoy sauceTo make this recipe gluten free, you can substitute the soy sauce for Tamari sauce.

1Head butter lettuceI prefer living butter lettuce for these wraps because it stays fresh longer and tastes like it was just picked from the garden!
Shredded carrotsOptional
Fresh herbs such as cilantro, basil or mintOptional
Instructions
Mix the soy sauce or Tamari sauce and the maple syrup in a small bowl with a whisk.
Remove tofu from the fluid it's stored in and pat it dry with a paper towel or kitchen towel. Crumble the tofu by adding the block to a large bowl and use a fork or a potato masher to break the block into crumbles.
Heat the oil in a nonstick skillet on medium heat and add the crumbled tofu.
Cook the tofu for about 10 minutes, stirring every 2-3 minutes.
Add the sliced green onions and sliced mushrooms to the tofu mixture and cook for another 5 minutes.
Add the soy sauce/maple syrup mixture to the tofu/vegetables and cook another 3-5 minutes.
Assemble the lettuce wrap by placing about 1/4 cup - 1/2 cup tofu mixture into one piece of lettuce and top with shredded carrots (optional) and fresh herbs (optional).
