30 Minute Tofu Lettuce Wraps

Crumbled tofu is sautéed with a delicious Asian sauce, paired with fresh veggies and wrapped in a crispy piece of lettuce, to create these delicious 30 Minute Tofu Lettuce Wraps.

Ingredients
  

  • 14 ounces Extra firm tofu Patted dry with a paper towel or kitchen towel
  • 2 tablespoons oil
  • ½ cup Soy sauce To make this recipe gluten free, you can substitute the soy sauce for Tamari sauce.
  • 1 tablespoon Maple syrup
  • ½ cup Green onions Sliced
  • 8 ounces Mushrooms Sliced
  • 1 Head butter lettuce I prefer living butter lettuce for these wraps because it stays fresh longer and tastes like it was just picked from the garden!
  • Shredded carrots Optional
  • Fresh herbs such as cilantro, basil or mint Optional

Instructions
 

  • Mix the soy sauce or Tamari sauce and the maple syrup in a small bowl with a whisk.
  • Remove tofu from the fluid it's stored in and pat it dry with a paper towel or kitchen towel. Crumble the tofu by adding the block to a large bowl and use a fork or a potato masher to break the block into crumbles.
  • Heat the oil in a nonstick skillet on medium heat and add the crumbled tofu.
  • Cook the tofu for about 10 minutes, stirring every 2-3 minutes.
  • Add the sliced green onions and sliced mushrooms to the tofu mixture and cook for another 5 minutes.
  • Add the soy sauce/maple syrup mixture to the tofu/vegetables and cook another 3-5 minutes.
  • Assemble the lettuce wrap by placing about 1/4 cup - 1/2 cup tofu mixture into one piece of lettuce and top with shredded carrots (optional) and fresh herbs (optional).
