Avocado Chickpea Toast with Green Peas

Ingredients
  

  • cup mashed chickpeas
  • cup mashed avocado
  • cup mashed green peas
  • Salt
  • Red pepper flakes
  • 4 slices of bread I recommend ciabatta
  • 8 slices cucumber
  • 1 cup sprouts
  • 8 slices tomato
  • flax seeds or chia seeds optional

Instructions
 

  • Combine chickpeas, avocado and green peas and mix together well
  • Add a pinch of salt (or to taste)
  • Toast the bread
  • Spread chickpea mixture over toast
  • Sprinkle with red pepper flakes - optional chia seeds or flax seeds
  • Add cucumber, tomato and sprouts (optional)
