This creamy avocado chickpea toast became one of my favorite quick meals because it’s filling, fresh, and loaded with nutrients.

The mashed chickpeas and peas make the avocado mixture extra thick and creamy while adding protein and fiber that help keep you satisfied longer. Paired with crispy ciabatta bread and fresh toppings, every bite has the perfect balance of creamy, crunchy, and fresh flavors.

Ingredients You’ll Need

For the Avocado Chickpea Spread

  • 1/3 cup mashed chickpeas
    Mash them really well for the creamiest texture.
  • 1/3 cup mashed avocado
    I like leaving a few chunks for texture, but you can mash it smooth if you prefer.
  • 1/3 cup cooked mashed green peas
    Cook until tender so they mash easily.
  • 1 teaspoon olive oil
  • Pinch of garlic powder
  • Salt, to taste
  • Red pepper flakes (optional)
    Adds a little heat and extra flavor.
  • 1 teaspoon chia seeds or flaxseeds (optional)
    Great for extra protein and fiber.

For Serving

  • 4 slices ciabatta bread
    Ciabatta works perfectly because the crispy crust and chewy center hold up well to the creamy topping. Sub gluten- free
  • Lemon wedges
  • Tomato slices (optional)
  • Sliced cucumber
  • Sprouts
  • Cilantro (optional)

How to Make Avocado Chickpea Toast

  1. In a medium bowl, mash together the chickpeas, avocado, and green peas using a fork or potato masher. Mash until creamy, leaving a few chunks if you like more texture.
  2. Stir in the olive oil, garlic powder, and salt.
  3. Toast the ciabatta bread until golden and crispy.
  4. Spread the avocado chickpea mixture over the toast.
  5. Top with red pepper flakes, chia seeds, or flaxseeds if using.

  • ⅓ cup mashed chickpeas
  • ⅓ cup mashed avocado
  • ⅓ cup mashed green peas

  • 4 slices of bread I recommend ciabatta
  • 8 slices cucumber
  • 1 cup sprouts
  • 8 slices tomato
  • flax seeds or chia seeds optional

Instructions
 

  • Combine chickpeas, avocado and green peas and mix together well
  • Add a pinch of salt (or to taste)
  • Toast the bread
  • Spread chickpea mixture over toast
  • Sprinkle with red pepper flakes – optional chia seeds or flax seeds
  • Add cucumber, tomato and sprouts (optional)
