BASE LAYER
Preheat the oven to 350°F. Line an 9X9-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
Press the mixture firmly into the bottom of the prepared pan.
Bake for 10 minutes. Remove from the oven and let it cool completely.
CHOCOLATE LAYER
Add chocolate chips, marshmallows and evaporated milk to a medium saucepan over low heat stirring until fully melted, and ingredients are combined and create a smooth sauce
Remove from heat and pour over the crust. Use a spatula to spread an even layer across the whole crust
Place in the freezer for 15 minutes
CHERRY LAYER
If using fresh cherries, combine them with cornstarch and lemon juice in a small saucepan. Cook over medium heat, stirring frequently, until the mixture thickens and the cherries soften (about 5-7 minutes). Allow to cool for 15 minutes.
Spread the cherry mixture over the chilled chocolate layer.
CRUNCH TOPPING
In a small bowl, add crushed Oreos, melted butter and sugar and stir together until the butter coats the cookie pieces.
Sprinkle cookie crumb mixture over the top of the cherries and gently press them into the cherry layer. Place in the freezer for another 15 minutes
Remove from the freezer and spread softened vanilla ice cream over the top of the crumb layer, and then sprinkle chocolate chips on top
Return to the freezer for 30 minutes
Before eating, remove from the freezer and allow to sit for 10 minutes
