Chocolate Cherry Ice Cream Oreo Bars

Chocolate Cherry Ice Cream Oreo Bars have a graham cracker crust, layers of fresh cherry topping, dark chocolate, and vanilla ice cream, and topped with Oreo cookie crumbs and pecans. It’s the perfect refreshing treat for any summer gathering!

A Cool Treat With a Secret Crunch

From the first bite of the buttery graham cracker base to the creamy vanilla ice cream and chocolate-studded cookie crunch, this frozen bar delivers layer after layer of texture and flavor that’s anything but ordinary.

Ingredients in Chocolate Cherry Ice Cream Oreo Bars

2 cups – vanilla ice cream

Crust

  • 1 cup graham cracker crumbs – I use a food processor
  • 1/4 cup sugar
  • 1/2 cup melted butter

Chocolate Layer:

  • 3/4 cup chocolate chips
  • 3/4 cup mini marshmallows
  • 4 tbsp condensed milk

Cherry Layer:

  • 2 cups fresh cherries, pitted and chopped (you can also use pie filling)
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice

Crunch Topping:

  • 1/4 cup sugar
  • 1 cup crushed Oreo cookies (with cream removed) – you can put into a ziploc and crush or put into food processor.
  • 1/4 cup melted butter

Instructions for Chocolate Cherry Ice Cream Oreo Bars

Base Layer

  • Preheat the oven to 350°F. Line an 9X9-inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Mix until the crumbs are evenly coated.
  • Press the mixture firmly into the bottom of the prepared pan.

  • Bake in the ovem for 10 minutes. Remove from the oven and let it cool completely.

Chocolate Layer:

  • Add chocolate chips, marshmallows, and evaporated milk to a medium saucepan over low heat, stirring until fully melted, and ingredients are combined and create a smooth sauce
  • Remove from heat and pour over the crust. Use a spatula to spread an even layer across the whole crust.
  • Place in the freezer for 15 minutes

Cherry Layer:

  • If using fresh cherries, combine them with cornstarch and lemon juice in a small saucepan. Cook over medium heat, stirring frequently, until the mixture thickens and the cherries soften (about 10-15 minutes). Allow to fully cool.
  • Spread the cooled cherry mixture over the chilled chocolate layer.

Crunch topping

  • Add crushed Oreos, melted butter and sugar into a small bowl, and stir until the butter coats the cookie pieces.
  • Sprinkle cookie crumb mixture over the top of the cherries and gently press them into the cherry layer. Place in the freezer for another 15 minutes
  • Remove from the freezer and spread softened vanilla ice cream over the top of the crumb layer, and then sprinkle chocolate chips on top.
  • Return to the freezer for 30 minutes.
  • Remove from the freezer and soften at room temperature for 10 minutes before serving.

Variations

Ice cream – your favorite ice cream flavor

Chocolate layer – dark, semi-sweet or milk

Graham crackers – cinnamon or chocolate

Storage

Place in an airtight container in the freezer for up to two weeks

  • Sprinkle cookie crumb mixture over the top of the cherries and gently press them into the cherry layer. Place in the freezer for another 15 minutes
  • Remove from the freezer and spread softened vanilla ice cream over the top of the crumb layer, and then sprinkle chocolate chips on top
  • Return to the freezer for 30 minutes
  • Before eating, remove from the freezer and allow to sit for 10 minutes
