Line a baking sheet with tin foil and cook bacon for 15 minutes at 400 degrees or until slightly crispy. Remove and from the oven and tear into small pieces
In a large bowl, whisk milk, eggs, salt, pepper, and hot sauce (if using) until fully combined
Add butter to a large skillet until it melts and then add egg mixture and scramble over low heat for 5 minutes, stirring constantly. Remove when slightly undercooked as they will continue cooking in the pan.
Take each tortilla and spread 2 tbsp cream down the center of each tortilla, then top with bacon slices, egg, and chopped jalapenos.
Fold each side about 1/4 into the middle and then start with one end of the tortilla carefully roll them up tightly to ensure the ingredients stay inside.
Place seam side down in a well-greased 9X13 baking dish
Cover with tin foil and bake for 30 minutes at 350 degrees or until center is warm
Remove the tinfoil and bake for an additional 5 minutes
