Cream Cheese Stuffed Bacon Egg Burritos
Ingredients
- 8 – large eggs
- 1 tbsp milk
- 8 – 8 inch flour tortillas
- 1 package of cream cheese softened
- 1-12 oz pack bacon
- 1-12 oz can of pickled jalapeno peppers sliced –
- Salt and pepper to taste
- 1 tbsp unsalted butter
- Optional hot sauce
Instructions
- Line a baking sheet with tin foil and cook bacon for 15 minutes at 400 degrees or until slightly crispy. Remove and from the oven and tear into small pieces
- In a large bowl, whisk milk, eggs, salt, pepper, and hot sauce (if using) until fully combined
- Add butter to a large skillet until it melts and then add egg mixture and scramble over low heat for 5 minutes, stirring constantly. Remove when slightly undercooked as they will continue cooking in the pan.
- Take each tortilla and spread 2 tbsp cream down the center of each tortilla, then top with bacon slices, egg, and chopped jalapenos.
- Fold each side about 1/4 into the middle and then start with one end of the tortilla carefully roll them up tightly to ensure the ingredients stay inside.
- Place seam side down in a well-greased 9X13 baking dish
