Crispy Quinoa Mushroom Patties

Crispy Quinoa Mushroom patties combine mushrooms, onions, thyme and parmesan with quinoa and are crisped to perfection.

Ingredients
  

  • 1 cup uncooked quinoa
  • 5 large eggs beaten
  • ½ teaspoon salt you may want to add more to taste
  • 2 teaspoons fresh thyme chopped (optional)
  • ½ cup onion finely chopped
  • ½ cup grated fresh Parmesan cheese
  • ¾ cup bread crumbs or gluten free bread crumbs
  • ½ teaspoon garlic powder
  • 8 ounces mushrooms finely chopped
  • 2 tablespoons olive oil

Instructions
 

  • Prepare quinoa according to the directions on the package. Place in a large mixing bowl and cool while you prepare the other ingredients.
  • Mix the cooked and cooled quinoa with the eggs, salt, thyme, onion, Parmesan cheese, bread crumbs, garlic powder and mushrooms.
  • Heat the oil in a skillet over medium-high heat. Form patties and cook each side for approximately 8-10 minutes, until brown (very crispy but not burnt).
