Prepare quinoa according to the directions on the package. Place in a large mixing bowl and cool while you prepare the other ingredients.
Mix the cooked and cooled quinoa with the eggs, salt, thyme, onion, Parmesan cheese, bread crumbs, garlic powder and mushrooms.
Heat the oil in a skillet over medium-high heat. Form patties and cook each side for approximately 8-10 minutes, until brown (very crispy but not burnt).
