Loaded with nutrient dense mushrooms and quinoa and flavored with fresh herbs and spices, trust me…you won’t miss the meat!
When it comes to quinoa, it’s got to be crispy.
Full disclosure. I’m not a huge fan of quinoa…unless it’s crispy. Quinoa is a healthier alternative to rice that’s packed with protein and fiber, but honestly, if I’m eating it cooked in a covered pan as a starchy side, I’ll always choose rice. If the quinoa has been crisped either in the oven on in a skillet…I’m all in. Toasted or sautéed quinoa adds big crunch factor and the consistency works perfectly in these Crispy Quinoa Mushrooms Patties.
A versatile patty.
These versatile patties can be served in many forms. Have fun exploring and add a comment if you find a great use for them. Here are a few I’ve tried.
- My favorite way to serve these patties is as the main dish with kid-friendly ranch dipping sauce. Pair with a fresh veggie side and voila…dinner is served!
- Crispy Quinoa Mushroom Patties make great veggie burgers. Put them on a fresh bun with either garlic aioli or avocado aioli and fresh lettuce and a slice of tomato and serve with fries and there you have it…a tasty and heathy (and vegetarian) burger alternative.
- ‘Try stuffing it in a pita (think falafel). When preparing the patties, create slightly smaller balls instead of the larger, flatter patty form. Stuff them into a pita along with all of the regular falafel toppings. The smaller form creates a little extra crunch and I think we can all agree that a good crunch is required for a falafel pita.

Crispy Quinoa Mushroom Patties
Ingredients
- 1 cup uncooked quinoa
- 5 large eggs beaten
- ½ teaspoon salt you may want to add more to taste
- 2 teaspoons fresh thyme chopped (optional)
- ½ cup onion finely chopped
- ½ cup grated fresh Parmesan cheese
- ¾ cup bread crumbs or gluten free bread crumbs
- ½ teaspoon garlic powder
- 8 ounces mushrooms finely chopped
- 2 tablespoons olive oil
Instructions
- Prepare quinoa according to the directions on the package. Place in a large mixing bowl and cool while you prepare the other ingredients.
- Mix the cooked and cooled quinoa with the eggs, salt, thyme, onion, Parmesan cheese, bread crumbs, garlic powder and mushrooms.
- Heat the oil in a skillet over medium-high heat. Form patties and cook each side for approximately 8-10 minutes, until brown (very crispy but not burnt).
