Ingredients
  

  • 2 lbs skinless chicken breast
  • ½ cup honey reduce if you want it less sweet
  • ¼ cup soy sauce tamari for gluten free
  • ¼ cup rice vinegar
  • 2 tsps sesame oil
  • 2-3 cloves garlic minced
  • 2 tablespoons fresh ginger grated
  • ½ cup creamy peanut butter
  • 1-1/2 cups chicken broth
  • 2 cups chopped broccoli
  • Optional - red pepper flakes

Instructions
 

  • In a large bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, peanut butter, and chicken broth until well combined.
  • Place the chicken breasts in the bottom of the crockpot.
  • Pour the honey ginger peanut sauce over the chicken in the crockpot, ensuring that all the chicken pieces are coated.
  • Cover the crockpot and cook on low heat for 4 hours or on high heat for 2 hours, until the chicken is cooked through and tender.
  • 30 minutes before it's done, add broccoli and pepper
  • Garnish with sliced green onions, sesame seeds, and chopped cilantro, if desired
