This Easter breakfast casserole is loaded with eggs, fresh herbs, green onions and two types of cheese. It's like a delicious cheesy omelet for a crowd so it makes hosting Easter brunch a piece of cake.
3green onionsfinely chopped. I use the white part for the onion flavor and half of the green part to add the deep green color.
1-2tablespoonsfresh parsleyfinely chopped. Fresh thyme, oregano, sage and basil are also delicious in this recipe. Use just parsley or a combination of your favorite fresh herbs.
8ozshredded Monterey jack cheesepepper jack cheese, sharp cheddar cheese or Mexican cheese mix
½cupflourTo make this recipe gluten-free replace the flour with a 1-to-1 gluten free flour. My favorite is Bob's Redmill 1-to-1 baking flour.
1teaspoonbaking powder
16ouncessmall curd cottage cheese
½teaspoonsalt
⅓teaspoonblack pepper
Instructions
Preheat the oven to 400 degrees.
Pour the melted butter into a 9x13 casserole dish and use a basting brush or a paper towel to cover the bottom and sides of the dish with the melted butter.
Add the eggs to a large bowl and use a whisk to beat the eggs. Add the remaining ingredients and whisk to combine. Pour the egg mixture into the casserole dish.
Bake at 400 degrees for 15 minutes. Reduce the heat to 300 degrees and bake for another 15-20 minutes. The total cook time will vary depending on the omelet fillings used but be sure to cook until the center of the casserole is firm and no longer runny.
If you're preparing this casserole the day prior to serving it, assemble the ingredients in the baking dish and cover it with foil and refrigerate. The next morning, remove it from the fridge while you preheat the oven. Give it a stir with a whisk to ensure all the ingredients are thoroughly combined and pop it in the oven for 15 minutes at 400 degrees. Turn the oven down to 300 and bake for another 20-25 minutes or until the center is no longer runny.
