This savory Easter breakfast casserole is loaded with eggs, fresh herbs, green onions and two types of cheese. It’s like a delicious cheesy omelet for a crowd so it makes hosting Easter brunch a piece of cake. It can be prepared the night before Easter or first thing in the morning. Simply pop it into the oven while the kids hunt for eggs or while you prepare for your guests to arrive, and in 30 minutes…a delicious homemade Easter brunch casserole is served.
Make it ahead of time
Making this Easter breakfast casserole ahead of time really comes in handy when you want to spend time with friends and family and not preparing breakfast in the kitchen all morning. If you’re preparing this egg casserole the day prior to serving it, assemble the ingredients in the baking dish and cover it with aluminum foil and refrigerate. The next day, remove it from the refrigerator while you preheat the oven. Give it a stir with a whisk to ensure all the ingredients are thoroughly combined and pop it in the oven for 15 minutes at 400 degrees. Turn the oven down to 300 and bake for another 20-25 minutes or until the center is no longer runny.
This Easter breakfast casserole isn’t just for Easter.
This casserole is versatile. I make it throughout the year when we have company at our home, for easy entertaining. Here are a few variations I’ve tried.
- Swap out the parsley for other herbs. If you would prefer to substitute the parsley for other herbs or use two tablespoons of a mixture of herbs, here are a few that are delicious with eggs.
- Fresh thyme
- Fresh oregano
- Fresh sage
- Fresh basil
- Fresh mint – I know, this one seems odd, but trust me…it really does give the casserole a fresh seasonal flavor!)
- Add a cup of fresh spinach to the casserole for beautiful green color and added nutrients. There is no need to sauté it prior to adding it into the egg mixture. Simply wash the spinach, dry thoroughly, give it a rough chop and add it to the egg mixture prior to baking.
- Christmas – This Make Ahead Christmas Morning Casserole is loaded with cheese, sausage, onions and two types of bell peppers – red and green – to make your Christmas morning festive. It’s perfect for Christmas brunch.
- Add sausage or turkey sausage to increase the protein.
- Adding cubed thick-cut ham or chopped deli counter ham is my mom’s favorite variation.
- Bacon is also delicious. I cook the bacon or turkey bacon in the oven at 375 degrees for about 25 minutes or until crispy. I break it up and add it to the casserole prior to baking it. Save a few pieces to crumble on top as soon as it comes out of the oven.

Easter Breakfast Casserole
Ingredients
- 4 tablespoons butter melted
- 12 eggs
- 3 green onions finely chopped. I use the white part for the onion flavor and half of the green part to add the deep green color.
- 1-2 tablespoons fresh parsley finely chopped. Fresh thyme, oregano, sage and basil are also delicious in this recipe. Use just parsley or a combination of your favorite fresh herbs.
- 8 oz shredded Monterey jack cheese pepper jack cheese, sharp cheddar cheese or Mexican cheese mix
- ½ cup flour To make this recipe gluten-free replace the flour with a 1-to-1 gluten free flour. My favorite is Bob's Redmill 1-to-1 baking flour.
- 1 teaspoon baking powder
- 16 ounces small curd cottage cheese
- ½ teaspoon salt
- â…“ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees.
- Pour the melted butter into a 9×13 casserole dish and use a basting brush or a paper towel to cover the bottom and sides of the dish with the melted butter.
- Add the eggs to a large bowl and use a whisk to beat the eggs. Add the remaining ingredients and whisk to combine. Pour the egg mixture into the casserole dish.
- Bake at 400 degrees for 15 minutes. Reduce the heat to 300 degrees and bake for another 15-20 minutes. The total cook time will vary depending on the omelet fillings used but be sure to cook until the center of the casserole is firm and no longer runny.
