Easy Creamy Mexican Dip

This Easy Creamy Mexican Dip pairs fresh cherry tomatoes and jalapeños with Mexican spices and is served over cream cheese to balance the heat.

Ingredients
  

  • 5 ounces cherry or grape tomatoes chopped or halved (depending on the size)
  • 1 finely chopped jalapeño Remove the ribs/membrane and seeds for a mild flavor. Keep them in the dip for more heat.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon taco seasoning or chili powder
  • ¼ teaspoon salt
  • ½ tablespoon oil
  • 8 ounces cream cheese softened
  • cup shredded Mexican blend cheese, pepper jack cheese or cheddar cheese optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Add cherry or grape tomatoes, jalapeño, apple cider vinegar, taco seasoning, salt and oil to a bowl and stir to combine.
  • Place cream cheese in an oven-safe, small baking dish and pour tomato mixture on top of the cream cheese.
  • Bake for 20 minutes.
  • Add shredded cheese to the top and bake for an additional 3-5 minutes or until the cheese is melted.
  • Serve with Fritos or tortilla chips.

Notes

Optional: Garnish with sliced black olives, sliced green onions or chopped fresh cilantro.
