Notes
You control the heat
I like to modify the heat in Easy Mexican Cream Cheese Dip based on my guests and their preference for spice. You can reduce the amount of heat by removing some or all of the ribs/membrane (the white portion) inside of the jalapeño. When I’m making this for my kids, I remove all of the ribs and seeds which produces a very mild flavor. When I’m making this dip for my fellow spice-loving guests, all the good stuff goes into the dip. Chop those jalapeños and throw everything in…seeds, ribs and all! When I’m serving a large number of guests, I simply slice a few raw pieces of jalapeno nice and thin, and add a small bowl next to the dip so guests can modify the heat.
Who said spinoffs never live up to the original?

- Once this dip is baked, mix it thoroughly. Add 1 – 1 1/2 cups rotisserie chicken. Use the mixture as a filling for taquitos or burritos.
