Light and Fluffy Chocolate Chip Passover Cookies

Light and fluffy, packed with chocolate chips and rolled in cinnamon sugar

Ingredients
  

  • 4 eggs
  • 1-1/2 cups sugar
  • 1 cup oil
  • 2 cups cake meal
  • 4 tbsp potato starch
  • 1 cup chocolate chips
  • Cinnamon
  • sugar

Instructions
 

  • Beat eggs with sugar until creamy
  • Add oil, cake meal, and potato starch and mix well
  • Stir in chocolate chips
  • Refrigerate for 1-2 hours
  • Mix cinnamon and sugar together in a small bowl
  • Roll in small balls and roll into cinnamon and sugar mixture
  • Bake at 350 until lightly brown (about 15-16 minutes)
  • Remove from the oven and allow to cook for 15-30 minutes
