Light and Fluffy Chocolate Chip Passover Cookies
Light and fluffy, packed with chocolate chips and rolled in cinnamon sugar

- 4 eggs
- 1-1/2 cups sugar
- 1 cup oil
- 2 cups cake meal
- 4 tbsp potato starch
- 1 cup chocolate chips
- Cinnamon
- sugar
Beat eggs with sugar until creamy
Add oil, cake meal, and potato starch and mix well
Stir in chocolate chips
Refrigerate for 1-2 hours
Mix cinnamon and sugar together in a small bowl
Roll in small balls and roll into cinnamon and sugar mixture
Bake at 350 until lightly brown (about 15-16 minutes)
Remove from the oven and allow to cook for 15-30 minutes
