What Makes These Different from Traditional Chocolate Chip Cookies

The result is a cookie that is:

โ€ข Fluffy and tender
โ€ข Slightly crisp on the outside
โ€ข Soft and airy inside
โ€ข Similar to a cross between a cookie and a light scone

The cinnamon sugar coating adds a delicate crunch while the chocolate chips provide bursts of sweetness in every bite.

What Is Cake Meal?

Cake meal is finely ground matzah that is used as a flour substitute during the Jewish holiday of Passover.

During Passover, traditional leavened flour products are not eaten. Instead, baked goods are made with:

โ€ข Potato starch

Cake meal is ground more finely than matzo meal, making it perfect for cookies, cakes, and other Passover desserts because it creates a lighter texture.

Question: There seems to be a discrepancy with the measurement for the potato starch. The body of the article states: “2 tbsp Potato Starch,” but the recipe portion lists it as: “4 tbsp potato starch.” Which measurement is the correct one? I would like to try this recipe, but do not know which measurement to use. Thank you for your recipe and your response.
