Slow Cooker Maple Dijon Chicken

This slow cooker maple dijon chicken is smothered in a sweet and savory sauce made from only a few simple ingredients and served over rice for the ultimate warm and cozy dinner.

Ingredients
  

  • 1 cup uncooked rice
  • 1 - 1.5 lbs skinless chicken breasts or thighs
  • cup dijon mustard
  • cup maple syrup
  • chicken broth
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2-3 rosemary sprigs optional

Instructions
 

  • Prepare the rice according to the directions on the package.
  • Add dijon mustard, maple syrup, broth, salt, pepper and rosemary sprigs to a bowl and mix with a whisk until thoroughly combined.
  • Add the chicken to the slow cooker. Pour the sauce over the chicken. Place the rosemary sprigs in the sauce.
  • Slow cook for 3-4 hours on low or 6-8 hours on high.
  • Remove the rosemary stem from the sauce. Serve the chicken and sauce over rice.
