I’ve tried this crock-pot chicken recipe with drumsticks, chicken thighs and chicken breast. The first time I made it, I tried it with drumsticks and that was a total flop! I wasn’t able to master a cooking time that would thoroughly cook the chicken but not to the point where it falls off the bone. And honestly…what’s the point of eating a drumstick if you can’t pick it up? Using chicken breasts and using thighs were both a success depending on your preference for dark meat or white meat. I favor dark meat but my husband prefers white meat so I double the sauce recipe and add a pound of each to keep everyone happy.

Slow cooker maple dijon chicken is just as delicious in the instant pot. Start by mixing the dijon mustard, maple syrup, broth, salt and pepper with a whisk until it’s thoroughly combined. Add the chicken to the instant pot and cover with the sauce. Place the rosemary sprigs in the sauce. Cook for 20 minutes on the “pressure cooker” setting. Once the instant pot cooking time has ended, vent the instant pot and open the lid. Make sure you remove the rosemary stems from the sauce prior to serving this dish.

- 2-3 rosemary sprigs (optional)
