Slow Cooker Parmesan Butter Chicken
A savory, buttery slow cooker chicken with a light but generous Parmesan sauce — perfect for serving over pasta. Extra broth means extra sauce (no dry noodles!)

2 lbs boneless skinless chicken breasts or thighs 2.5 cups chicken broth 1 tsp Italian seasoning ¾ tsp salt ½ tsp black pepper 4 tbsp butter cut into small pieces 1 cup finely grated Parmesan 1 16 oz box pasta penne, rotini, bowties, or egg noodles 1 tbps cornstarch
Place chicken in the slow cooker and pour broth over the top
Sprinkle Italian seasoning, salt, and pepper evenly.
Scatter butter pieces around the chicken.
Cover and cook on low for 5 hours or high for 3 hours
Remove the chicken and shred and return back to the crockpot
Sprinkle the grated Parmesan over the chicken and broth.
Stir gently until melted and smooth
Cook the Pasta
Before draining, reserve 1 cup of hot pasta water.
Add pasta water, then stir in flour and cornstarch until fully combined
Cover and cook on low for 1 hour or high for 30 mins
Serve chicken and sauce generously over pasta
