I have to admit, that I have a major sweet tooth. These Peppermint Patty Rice Cakes are one of my go-to treats when I’m craving something chocolatey, but don’t want anything too sweet. One of my favorite chocolate candies is peppermint patties, and the combo of the chocolate with the cool, chilling flavor of the mint is just the best.
I started making these around Christmas after baking (and tasting) dozens of cookie recipes. I still craved something chocolatey, but just a bit lighter. My daughter eats rice cakes by the dozen, so I thought why not make something fun out of a plain ol’ rice cake? These are now a staple in my house, not just around the holidays but all year long!

Why Rice Cakes
A low-calorie and gluten-free alternative to bread or crackers and works well with many toppings like spreads, peanut butter, cheese, seasonings, vegetables, or Nutella. The options are endless. They make the perfect base for something more indulgent like chocolate or other dessert toppings.
Variations
This recipe uses unsalted rice cakes, but if you like the combo of sweet and salty, swap them out for salted rice cakes
Dark chocolate instead of milk chocolate
Peppermint candy – instead of candy canes, use the round peppermint mints, or any other type of minty candy
For a little less chocolate, only dip one side of the rice cake or one half into the chocolate
Ingredients
8 unsalted rice cakes ( I like Quaker)
6 squares of melting chocolate (milk or dark chocolate)
4 squares of white melting chocolate (or white chocolate chips)
6 peppermint candy canes crushed into small pieces
Optional: teaspoon peppermint extract
Instructions for Peppermint Patty Rice Cakes
If using melting chocolate, follow the instructions on the package as most will have you keep the chocolate in the tray they provide. If using chocolate chips, add them to a microwave-safe bowl and heat at 20-second intervals stirring in between each. You can also add a bit of coconut oil to help smooth out the chocolate.
Place rice cakes one at a time into the melted chocolate, shaking off any excess chocolate and placing them on a baking sheet covered with pieces of parchment paper, Allow to dry for 5 minutes.
While the rice cakes are drying melt your white chocolate. Once the rice cakes are almost dry, sprinkle the crushed candy canes on top and then drizzle the white chocolate over the top of the cakes. You can also add a teaspoon of peppermint extract to the melted white chocolate if you want a bit more peppermint.
Tips
Make sure the milk chocolate is almost dry, but still wet enough for the candy canes to stick. If it’s too wet, they will melt into the chocolate
Since rice cakes have grooves, use a spoon to spread the chocolate over the areas that didn’t get covered when you dipped it into the chocolate
Drizzle the white chocolate thinly over the top of the candy so it doesn’t melt since the chocolate will be warm
Once the drizzle is added, allow the rice cakes to fully dry for about 30 minutes
