Marshmallow M&M Crumble Sugar Cookie Bars have a layer of thick buttery cookie, topped with gooey marshmallows, hunks of chocolate chip cookies, M&M’s and rainbow sprinkles. They are a fun festive dessert for birthday parties, bbq’s, family get togethers or just a treat for yourself.
Why These Marshmallow Sugar Cookie Bars Are Anything But Ordinary
These bars start with a soft, buttery sugar cookie base, then get smothered in gooey, melted marshmallows that create a luscious layer of sweetness. Finished with bits of cookie crumble gently pressed on top, every bite is a perfect mix of tender, chewy, and golden-toasty — proving sugar cookies can be anything but plain.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 -3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate cookies broken into pieces (I use Chips Ahoy)
- 1/2 cup mini m&m’s (or chopped regular sized candies)
- Rainbow sprinkles
- 2 cups mini marshmallows
- Optional: mini chocolate chips

Instructions in Marshmallow M&M Crumble Sugar Cookie Bars
- Preheat your oven to 350°F Line a 9×13-inch baking pan with parchment paper or lightly greased.
- In the bowl of a stand mixer with the paddle attachment on medium speed, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract and almond extract, if using.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredient mixture until just combined.
- Spread the cookie dough evenly in the prepared pan.
- Bake in the preheated oven for 25 minutes, or until edges are golden brown and a toothpick comes out clean in the center of the pan
- Remove from the oven, drop the marshmallows evenly over the top and press them down into the sugar cookie bars so they start to melt and stick to the sugar cookie base.

- Place back in the oven for 3 minutes or until the marshmallow just start to melt. Remove and using a spatula, spread the marshmallows evenly across the top
- While the marshmallows are still warm, place the cookie chunks over the top. Then add the m&m’s and sprinkles to the top. Gently press into the marshmallow mixture, and allow to cool for 15 minutes

Variations
One of the fun things about these sugar cookie bars is you can customize them with different toppings!
M&M – any flavor or color you want – peanut, milk or dark chocolate, caramel
Cookies – peanut butter, chocolate, oreo

Storing Marshmallow M&M Crumble Sugar Cookie Bars
Covered tightly in aluminum foil, or plastic wrap, these bars will stay fresh for 2-3 days.

- Remove from the oven, add the marshmallows over the top until they start to melt, then press them down into the sugar cookie bars
- Place the cookie bars back into the oven and cook for an additional 3 minute or until the marshmallows just start to melt. Remove from the oven and using a spatula, spread them evenly across the top of the sugar cookie bars.
- While the marshmallows are still warm, drop the cookie chunks over the top evenly, pressing them into the warm marshmallows. Then sprinkle m&m's and add the sprinkles over the top, pushing down into the marshmallow topping.
- Allow to cool for 15 minutes
