Chewy Soft Orange Sandwich Cookies

These Chewy Soft Orange Sandwich Cookies are buttery and soft with a chewy center, a hint of orange flavor and a fluffy vanilla cream center. They are so easy to make and only require a couple of steps.

Different from most sugar cookies, this Chewy Soft Orange Sandwich Cookie recipe uses powdered sugar instead of white sugar, which helps to absorb moisture from other ingredients and gives them an extra soft and chewy texture. The orange zest give the just the right amount of citrus flavor, and paired with the sweet buttercream make for the perfect combo. This is an old family recipe and I never stray!

No Chilling Required for Chewy Soft Orange Sandwich Cookies

The best thing about this recipe, is you don’t have to chill the dough. It uses simple pantry ingredients and is so easy to make. The cookies only have three easy steps, and the icing comes together in just a few minutes.

Ingredients

  • Cookies
  • 1 cup unsalted Butter
  • 1-1/2 cups confectioner Sugar
  • 1 tsp Vanilla
  • 1 tbsp grated Orange rind (zest)
  • 1 tbsp orange juice (I squeeze if from the orange I use the zest for)
  • 2 cups all-purpose flour
  • 1 tsp cream of Tartar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 egg
  • Vanilla filling
  • 1/2 cup unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar
  • 2 tbsp milk

How to Make Chewy Soft Sandwich Cookies

  • Pre-heat oven to 375
  • In the bowl of a stand mixer with the paddle attachment, cream butter and sugar until fluffy
  • Add vanilla, orange rind, and egg. Mix together until it’s fully combined.
  • Whisk together dry ingredients and add to the wet ingredients to the flour mixture and mix well
  • Drop onto a well-greased cooked or lined with parchment paper or a silicone mat
  • Bake for about 6-8 minutes. Remove when they still feel soft and a bit undercooked. You don’t want the edges to burn.
  • Allow to cool on the cookie sheet for 10 minutes and then transfer to a wire rack.
  • ButterCream
  • In the bowl of a stand mixer, add the softened butter, powdered sugar, and vanilla and mix until fully combined and fluffy
  • Slowly add milk until you get the consistency you want.
  • Once cookies are cool add a tablespoon of frosting on one cookie, then top with another and slightly press down until you can see the frosting on the outside of the cookie

Notes

Cookies
Cream butter and sugar until fluffy
Add vanilla, orange rind, and egg. Mix together until it’s fully combined.
Whisk together dry ingredients and mix really well. Usually, you don’t want to overmix flour, but for this mix until really well combined.
Drop onto a well-greased cookie sheet – I use a large cookie scooper bake at 375 until done. You don’t want the edges to be brown. They will almost seem undercooked but will set up when cooling
ButterCream
Buttercream. Add the softened butter, powdered sugar, and vanilla to a large mixing bowl. Add 1-2 tbsp milk to get the consistency you want. Mix with a stand mixer or hand mixer until light and fluffy. 3-4 minutes.
