Rustic Bread Breakfast Bake

Rustic Bread Breakfast Bake has layers of buttery cubes French bread with cheddar, spinach, onions, and a savory egg custard for an irresistibly cheesy, golden casserole that’s perfect for lazy mornings or feeding a hungry crowd.

Eggs, Cheese & Bread Combine for the Easiest Breakfast Casserole

A make-ahead dish that turns yesterday’s bread into today’s cozy comfort. With sautéed onions, bright spinach, and a touch of hot sauce for a little zing, this bake is everything you want on a slow morning: effortless, hearty, and bursting with melty cheese in every bite.

Ingredients 

  • 4 cups thick french bread pulled apart into 2 inch pieces (it’s better if it’s a day or too old)
  • 2 cups Shredded Cheddar Cheese – can also mix up the cheeses such as colby jack or mozzarella
  • 9 Large Eggs
  • 1 cup diced Spinach
  • 1/4 cup Milk
  • Hot Sauce optional
  • 1/2 finely chopped Onion
  • Butter
  • Salt
  • Black Pepper
  • Optional: Add bacon or sausage

Instructions for Rustic Bread Breakfast Bake

  • Spread melted butter along the bottom of a 9X13 casserole dish
  • Place bread cubes closely together across the bottom of the dish 
  • Dice onion and spinach into small pieces
  • In a medium bowl whisk eggs, milk, hot sauce, salt, and pepper a large bowl, and stir in spinach and onion
  • Pour the egg mixture over the top of the bread
  • Sprinkle cheese evenly over the top and cover with foil
  • Place in the fridge for 30-60 minutes. This allows the bread to soak up the egg
  • Bake in the oven covered at 350 degrees for 30 minutes, then remove foil and bake an additional 5-10 minutes, or until middle is completely cooked
  • Allow 15 minutes to cool

Cheese – Cheddar, Colby Jack, Mozzarella, Provolone, pepper jack

Veggies – spinach, onions, red peppers, mushrooms, broccoli

Meat – Sausage, Bacon, Ham

Storing Leftovers

Store Rustic Bread Breakfast Bake can be kept in the refrigerator wrapped in aluminum foil for 2-3 days by wrapping it tightly with plastic wrap to keep the moisture so it won’t dry out, and can easily be re-heated by microwaving for 2-3 minutes.
