A make-ahead dish that turns yesterday’s bread into today’s cozy comfort. With sautéed onions, bright spinach, and a touch of hot sauce for a little zing, this bake is everything you want on a slow morning: effortless, hearty, and bursting with melty cheese in every bite.
Ingredients
- 4 cups thick french bread pulled apart into 2 inch pieces (it’s better if it’s a day or too old)
- 2 cups Shredded Cheddar Cheese – can also mix up the cheeses such as colby jack or mozzarella
- 9 Large Eggs
- 1 cup diced Spinach
- 1/4 cup Milk
- Hot Sauce optional
- 1/2 finely chopped Onion
- Butter
- Salt
- Black Pepper
- Optional: Add bacon or sausage
Instructions for Rustic Bread Breakfast Bake
- Spread melted butter along the bottom of a 9X13 casserole dish
- Place bread cubes closely together across the bottom of the dish

- Dice onion and spinach into small pieces
- In a medium bowl whisk eggs, milk, hot sauce, salt, and pepper a large bowl, and stir in spinach and onion
- Pour the egg mixture over the top of the bread
- Sprinkle cheese evenly over the top and cover with foil

- Place in the fridge for 30-60 minutes. This allows the bread to soak up the egg
- Bake in the oven covered at 350 degrees for 30 minutes, then remove foil and bake an additional 5-10 minutes, or until middle is completely cooked
- Allow 15 minutes to cool

- 2 tbsp Butter melted
- Salt to taste
