Cake Bite Snowballs are a simple, shortcut recipe that comes together in no time using a box of cake mix and prepared frosting. Roll the cake balls in white melting chocolates and sweetened coconut “snow” to create an adorable, kid-friendly, homemade holiday treat in just a few easy steps.

I love to bake seasonal treats with my kids but I’ve learned to simplify during the holiday season. Our schedules in December are packed and without careful planning we can easily forget to enjoy the fun and beauty of the season. I created this fun, kid-friendly snowball recipe to make use of shortcuts like box cake mix, prepared icing and microwaveable melting chocolate. Cake Bite Snowballs are simple enough to make with young kids in just about an hour of prep time and bake time!
Fun flavor combinations
Since we’re using box cake mix, trying new flavor combinations is a piece of cake (sorry, I couldn’t resist). Here are a few fun flavor combinations that we’ve tried over the years.
- Cherry chip cake mix + vanilla icing + vanilla melting chocolates + coconut flakes topping
- Carrot cake mix + vanilla icing + vanilla melting chocolates + coconut flakes topping. Carrot and coconut – YUM!
- German chocolate cake mix +chocolate icing + vanilla melting chocolates + coconut flakes topping. A fun twist on German chocolate cake.
- Strawberry cake mix + vanilla icing + vanilla melting chocolates +coconut flakes topping
- Red Velvet cake mix + vanilla icing +vanilla melting chocolates + coconut flakes topping. The red cake is fun and festive!
- White or yellow cake mix + vanilla icing +vanilla melting chocolates + white sprinkles or confectioners’ sugar. White Sprinkles or confectioners’ sugar are great substitutes if you’d prefer to skip the coconut.

Cake Bite Snowballs
Ingredients
- Box white, yellow or chocolate cake mix Use a gluten free box mix to make this recipe gluten free.
- Oil, eggs, water according to package instructions. Ingredients needed to prepare the box mix are listed on the back of the back of the package.
- 1 – 1 ½ cups prepared vanilla icing Start with one cup and add more as needed to form the balls.
- 10 oz bag of white chocolate chips or white chocolate melting wafers If you can find them, I suggest using melting wafters like Ghirardelli White Chocolate Melting Wafers. They're easier to work with and have a smoother, creamier texture.
- 14 oz bag sweetened flaked coconut
Instructions
- Prepare the box cake mix according to the directions on the the package. Allow the cake to cool completely.
- Line a cookie sheet with parchment paper.
- Add the prepared and cooled cake to a large bowl along with the icing. Mix by hand or with a mixer on the low setting for about 1 minute or until thoroughly combined with no lumps. Form bite size balls (about one tablespoon, give or take) and place them on the parchment paper-lined pan. Refrigerate the cake and icing mixture for about 1-2 hours or freeze for 30 minutes.
- Place the chocolate chips or chocolate melting wafers in a large microwave-safe bowl and microwave in 30-second increments (stirring before you restart the microwave) until the chocolate is completely melted.
- Drop each ball into the melted chocolate and roll around until completely coated. Remove with a fork allowing excess chocolate to drip off before placing the ball onto a plate with the flaked coconut. Roll the ball in the coconut until it's completely covered in coconut.
- Place the snowball back onto the parchment paper and start the process with the next ball. Continue until approximately 24 snowballs are formed. If you prefer cake pops, simply stick a cake pop stick or lollipop stick into each ball before they're refrigerated. Refrigerate for 1-2 hours before serving.
- Store in the refrigerator for up to 5 days.
