Tips for Orange Marmalade Chocolate Dipped Butter Sandwich Cookies
Take the cookies out when they feel slightly undone to ensure they are slightly crisp on the outside and soft on the inside.
Leave cookies on the baking sheet for 10 minutes so they can continue to cook all the way through
Allow the cookies to cool completely before adding the orange marmalade
Melting chocolate will dry much quicker than melted chocolate chips
Ingredients

- 3/4 cup unsalted butter – slightly softened
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 tsp cornstarch
- ¾ cup sugar
- 1/2 tsp cream of tartar
- 1 large egg
- 2 1/4 cups sifted all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 -16 oz package of dark melting chocolate or dark chocolate bars (melting chocolate is the best)
- 1 cup orange marmalade – I like Smuckers
Instructions for Orange Marmalade Chocolate Dipped Butter Sandwich Cookies
Pre-heat oven to 375 degrees
In a large bowl, whisk flour, baking powder, cornstarch, cream of tartar, and salt.
In the bowl of a stand mixer on medium speed, cream butter, and sugar until light and fluffy
Beat in the egg, almond, and vanilla extract until thoroughly combined, scraping the bowl’s sides with a rubber spatula.
Gradually add flour mixture until well blended.
Using a medium-sized cookie scoop, drop the cookie dough onto a well-greased baking pan or parchment paper.
Bake for 10-12 minutes. You want to remove them from the oven when they feel undercooked. You don’t want them to get brown or crisp around the edges.
Place on a wire rack until thoroughly cooled
Once completely cooled, spread 2 tsp of orange marmalade on the flat side of one cookie. Press another cookie into it to form a sandwich.
Place the chocolate in a small bowl and heat in the microwave at 30-second intervals stirring in between each one. Be careful not to cook too long or it will start to clump
Dip half of the sandwich cookie into the chocolate and shake off excess chocolate. Place on parchment paper or a silicone mat
Allow to dry for 15-30 minutes.
Storing Orange Marmalade Chocolate Dipped Butter Sandwich Cookies
These orange butter cookies can be stored in an airtight container for 4-5 days. They can also be frozen in a ziploc bag for up to two months.
