I absolutely love Trader Joe’s, and one of my favorite things is finding ingredients that give a delicious twist on classic recipes and take less prep time than making something completely from scratch. On my last visit, I found two of their seasonal fall products – Cinnamon Roll Blondie Bar mix and Cinnamon Roll spread. With both ingredients in tow, I set home to find a creative way to use these in a fun fall recipe and this pumpkin blondies recipe was born.
I’ve been on a big pumpkin kick lately, so adding a pumpkin twist to these cinnamon roll blondies only made sense. By adding pumpkin and pumpkin pie spice to these Traders Joes Cinnamon Roll Blondies, the chewy blondies were transformed into the ultimate fall treat with the most amazingly moist and chewy texture and a creamy melt-in-your-mouth topping.
What are Blondies?
Blondies don’t use chocolate, but the taste and texture resemble a brownie. However, while traditional brownies have a super chocolatey flavor and use traditional granulated sugar, blondies instead use brown sugar making them moister and chewier than brownies.

Unsalted Butter
Eggs
Pumpkin Puree – canned or fresh, but not pumpkin pie filling
Cinnamon
Nutmeg
Cloves
Ginger

How To Make Pumpkin Cinnamon Roll Blondies
- Grease a 9X9 baking pan with cooking spray or lined with parchment paper
- Add cinnamon mix and softened butter to a small bowl and combine with a fork until it forms a crumble
- Pour the blondie mix into a large bowl and whisk in the spices.
- Put eggs into a medium bowl and beat lightly
- Add the melted butter, and pumpkin and mix together well
- Stir in the blondie mix until just combined
- Pour half of the batter into the pan, add drops of the cinnamon crumble, and then top with the rest of the batter.
- Bake at 350 for 20-25 minutes, remove from the oven and allow to cool for 30 minutes.
- Spread a thin layer of cinnamon bun over the blondies
- Mix the packet of glaze with water and drizzle over the top
Storing Pumpkin Cinnamon Roll Blondies
Make sure to keep these in the refrigerator because the cinnamon bun spread needs to be kept refrigerated. Take them out about 10 minutes before eating so the spread can soften up.

Ingredients
- 1 box Trader Joe's Cinnamon Roll Blondie Bar Mix
- 6 tbsp Trader Joe's Cinnamon Bun Spread
- 6 tbsp Unsalted Butter
- 2 Eggs
- 1 cup Pumpkin Puree – canned or fresh but not pumpkin pie filling
- 1 tsp Cinnamon
- ¼ tsp Nutmeg
- ¼ tsp Cloves
- ¼ tsp Ground ginger

- Mix the glaze packet with 1 tbsp of water, stir together and drizzle over the top.
- Store in the refrigerator
