These mini caramel apple pies have everything I love about apple pie — tender cinnamon apples, gooey caramel and flaky crust — in a cute little individual pie.
They’re easier to serve than a full-size pie, there’s no slicing involved, and everyone gets plenty of that buttery crust. Add a scoop of vanilla ice cream while they’re still warm and they’re pretty hard to beat.
Why You’ll Love These Mini Caramel Apple Pies
These are one of my favorite desserts to make when apples are in season. You get all the flavors of caramel apple pie without having to make and serve a full pie.
They’re:
- Easy to make
- Perfectly portioned
- Filled with warm cinnamon apples and caramel
- Great for fall gatherings and Thanksgiving
- Easy to make ahead
- Even better warm with vanilla ice cream
What Are the Best Apples for Mini Apple Pies?
You want an apple that will soften as it bakes without completely turning to mush.
Granny Smith is always a good choice because the tart flavor balances the sweetness of the caramel. Honeycrisp also works really well and gives you a slightly sweeter filling.
You can also use a combination of apples. Mixing a tart apple with a sweeter variety gives the filling more flavor than using just one kind.
Whatever you choose, stick with a firm apple that holds up well when baked.
How Small Should I Cut the Apples?
For mini caramel apple pies, smaller is better.
A regular apple pie can handle larger slices because it has plenty of time in the oven. Mini pies bake much faster, so the apples need to be small enough to become tender in that shorter baking time.
Try to cut them into small, evenly sized pieces. That way you won’t end up with some pieces completely soft while others are still crunchy.
How to Make Mini Caramel Apple Pies
Prepare the crust and apple filling according to the recipe below.
Cut the pie crust to fit your muffin tin and gently press each piece into the cups. Don’t stretch the dough — just ease it into place.
Fill each crust with the apple mixture, being careful not to overfill them.
Add the caramel and finish the tops according to the recipe.
Bake until the crust is golden and the apple filling is bubbling.
Let the pies cool in the pan for a bit before trying to remove them. The filling will be extremely hot right out of the oven, and giving them a little time to set makes them much easier to get out of the pan.
How Do I Keep Mini Apple Pies From Getting Soggy?
The biggest culprit is usually too much liquid in the filling.
Apples release juice as they cook, and caramel adds even more moisture. Be careful not to add extra liquid to the filling or overload each little pie.
Also, make sure you bake them until the crust is actually golden. A pale crust may be technically baked, but it won’t have that crisp, flaky texture you want against the soft apple filling.
And don’t cover warm pies tightly. Trapped steam can soften the crust.
Should I Cook the Apple Filling First?
Follow the method in the recipe card below. The important thing with mini pies is making sure your apple pieces are small enough to cook through during the shorter baking time.
If you cut the apples too large, the crust can finish baking before the apples become tender.
That’s why those small, evenly sized pieces really matter here.
How Do I Know When Mini Apple Pies Are Done?
Look for two things: golden crust and bubbling filling.
The edges of the crust should be nicely golden, and you should see the apple filling bubbling.
If the crust still looks very pale, give the pies a little more time.
Just remember that the caramel and apple filling will be extremely hot when they first come out of the oven. Let them cool before taking that first bite. I know. It’s difficult.
How Do I Get Mini Pies Out of a Muffin Tin?
Let them cool in the pan first.
Trying to pull a hot mini pie out immediately is a good way to leave half the crust behind.
Once they’ve cooled and the filling has had time to set, gently run a thin knife around the edge if necessary and carefully lift each pie from the pan.
If you’re worried about sticking, make sure you prepare your muffin tin as directed in the recipe before adding the crust.
Can I Make Mini Caramel Apple Pies Ahead of Time?
Yes. That’s one reason these are so good for entertaining.
You can bake them ahead of time, let them cool completely and store them until you’re ready to serve.
I prefer them slightly warm, so reheat them briefly before serving. That brings the caramel and apple filling back to life and helps the crust taste freshly baked again.
What’s the Best Way to Reheat Mini Apple Pies?
The oven or toaster oven is your best bet if you want to keep the crust crisp.
Warm the pies just until the filling is heated through.
You can use the microwave when you’re in a hurry, but the crust will be softer.
Although if you’re adding vanilla ice cream on top, I doubt anyone is going to complain.
Can I Freeze Mini Caramel Apple Pies?
Yes.
Let the mini caramel apple pies cool completely, then place them in an airtight freezer-safe container. If you’re stacking them, put parchment paper between the layers.
When you’re ready to eat them, let them thaw and warm them in the oven until heated through.
Freezing them individually also makes it very easy to pull out one or two instead of defrosting an entire dessert.
How to Store Mini Apple Pies
Let the pies cool completely before storing them.
Place them in an airtight container and follow the storage guidance in the recipe card for your filling.
For the best texture, warm them in the oven or toaster oven before serving so the crust crisps back up.
What to Serve With Mini Caramel Apple Pies
Honestly, these don’t need much.
A warm mini pie with a scoop of vanilla ice cream is my favorite way to serve them. You can also add a little extra caramel drizzle right before serving.
Whipped cream works too, but warm apple pie + cold vanilla ice cream will always win for me.
A Few Final Tips
The biggest thing to remember with mini caramel apple pies is that everything happens faster than it does with a full-size pie.
Cut your apples small and evenly, don’t overload the crust with filling, and bake until the crust is actually golden.
Then give them a little time to cool before removing them from the pan.
The waiting might actually be the hardest part.
