Blue cheese, balsamic glaze and roast beef and onions wrapped between two crispy tortillas…it’s the super simple and delicious dinner you’ll turn to on busy weeknights. I call this recipe 20 Minute Steak and Blue Cheese Quesadillas but honestly…once you get the hang of it and it’s in your regular dinner rotation (it will be…trust me), it comes together in 10-15 minutes. This is my favorite recipe to make during the Fall and Spring lacrosse seasons when we’re at the field until 7:30 or 8 and I need to get dinner on the table fast, before those little hands start grabbing snacks.
Save time with deli roast beef
I use sliced deli roast beef for this recipe. My favorite is Boar’s Head London Broil. It’s a little pricier than the generic version but it really is worth it. I sauté half an onion to give this recipe a fresh onion flavor but if you’re really short on time, you can skip this step. The blue cheese and balsamic glaze are essential ingredients that give this 20 minute recipe a flavor that seems like it took a lot longer to prepare.
Corn or flour tortillas?
You can use corn or flour tortillas for this recipe. I usually go for corn because we have a gluten allergy in our family and using one type of tortilla keeps it easy. If I’m using flour, I typically select a smaller tortilla to make it easy to flip in the pan, to crisp both sides. Because these quesadillas don’t have a sticky cheese, flipping a larger tortilla can be tricky.
What’s in 20 Minute Steak and Blue Cheese Quesadillas?
- Sliced deli roast beef
- Blue cheese
- Onion, chopped – You can leave this out if you’re short on time but it really does add big, fresh flavor!
- Balsamic glaze – Adds BIG flavor!
- Corn tortillas – Flour tortillas are also delicious in this recipe but I use corn tortillas to make it gluten free. If you’re using flour tortillas, this recipe will make two large quesadillas that can be cut in half before serving.
- Oil – You’ll need to use a little oil in the pan to crisp up these quesadillas. You could also use cooking spray.
Directions
- Sauté chopped onion in about one tablespoon of oil, for 5-7 minutes or until onion begins to soften.
- Separate deli slices and cut them into smaller pieces and add to the onions. Cook until beef is warmed up.
- Heat another pan and add one teaspoon of oil and spread with a spatula.
- Add one tortilla to the pan and place 1/4 of beef and onion mixture on top of the tortilla.
- Sprinkle with about 1-2 tablespoons of blue cheese (depending on taste preference, I prefer more but my kids prefer less) and drizzle with balsamic glaze to taste (about 1/2 tablespoon).
- Place another tortilla on top and cook each side for 3-4 minutes or until crispy.
- To speed up the process, I use two large pans and cook two quesadillas in each pan.
