Instant Pot Creamy French Onion and Mushroom Soup

Onions are infused with white wine and caramelized in only ten minutes using the Instant Pot. The caramelized onions are then simmered in seasoned broth along with mushrooms and just enough cream to transform the flavorful broth into a creamy, hearty soup. Instant Pot Creamy French Onion and Mushroom Soup is a decandent spin on classic French onion soup. The creamy, warm and cozy broth makes it the perfect meal for these cold Winter nights.

I’ve eaten a gluten free diet for over ten years, so I’ve become pretty good at coming up with gluten free alternatives to the foods that I love. Unfortunately toasted bread and melted cheese on top of a hot bowl of soup isn’t something we can do easily using gluten free ingredients. I haven’t come across a gluten-free bread that can hold form while soaking in a hot broth, so I’ve still made french onion soup, but without the bread. Something was always missing…that bread adds substance to French onion soup and without it, it didn’t feel like a filling Winter meal. After failed attempts with gluten free bread I decided to add a little decadence to the broth by adding whipping cream to create a heavier, creamier broth. I added mushrooms for added nutrients and because they compliment onions in the best way possible. Sprinkle a little shredded Gruyere or Swiss cheese on top and Instant Pot French Creamy Onion and Mushroom soup might just because your new favorite onion soup.

The Instant Pot turns an hour long process into 10 minutes.

To caramelize the onions just the way I like them, it always takes a minimum of 45 minutes…sometimes as long as an hour. And of course you can’t walk away during the process as it requires frequent stirring to ensure the onions don’t burn. Who has the time for that?

To caramelize onions in the instant pot, simply throw a few ingredients in, set the “pressure cook” setting for 5 minutes and walk away until the timer beeps and it’s time to vent. Once the pot’s been vented and the lid removed, switch the setting to “sauté” and give it a few stirs until all of the liquid is absorbed into the onions. There you have it…perfect onions in a lot less time and with a lot less effort.

What’s in Instant Pot Creamy French Onion and Mushroom Soup

  • 4 tablespoons butter
  • 3-4 medium sized onions, sliced thin
  • 1/4 cup dry white wine + 1/2 cup dry white wine. You’ll use 1/4 cup while caramelizing the onions and the rest for the broth.
  • 1/4 cup vegetable broth (or beef stock) + 4 cups vegetable broth (or beef stock). I use Better than Bouillon Seasoned Vegetable Broth. No other vegetable broth compares in my opinion! You’ll use 1/4 cup while caramelizing the onions and the rest for the broth.
  • 1/4 teaspoon dried thyme
  • 4 ounce can mushrooms, drained and rinsed
  • 1/3 cup heavy cream
  • 8 ounces shredded Swiss cheese or gruyere cheese.
  • Salt and black pepper, to taste. I don’t add salt when I make this soup but vegetable broths have different amounts of salt so depending on the broth you use, you may need to.

Directions

  • Add sliced onions, butter, 1/4 cup vegetable broth and 1/4 cup white wine to the instant pot. Stir to combine. Set the “pressure cook” setting for 5 minutes.
  • Once the timer goes off, move to the venting position. Once vented remove the lid.
  • Set the pressure cooker to the sauté setting and cook until the remaining liquid is absorbed. Stir every 30-45 seconds to ensure the onions don’t burn. This usually take 3-4 minutes.
  • Once the liquid is absorbed add the remaining broth, the remaining wine, thyme and the mushrooms to the instant pot while it’s on the “saute” setting and simmer for about 5 minutes while stirring occasionally. .
  • Adjust the setting to “warm” and add the cream and stir to combine. Add salt and pepper, to taste.
  • Serve with about one tablespoon of shredded Gruyere or Swiss cheese on top of each serving bowl.

  • ¼ cup dry white wine + 1/2 cup dry white wine You'll use 1/4 cup while caramelizing the onions and the rest for the broth.
  • ¼ cup vegetable or beef broth + 4 cups vegetable or beef broth I use Better than Bouillon Seasoned Vegetable Broth. No other vegetable broth compares in my opinion! You'll use 1/4 cup while caramelizing the onions and the rest for the broth.
