30-Minute Southwestern Sausage Orzo

This 30-Minute Southwestern Sausage Orzo is the kind of dinner you make onceโ€ฆ and then keep coming back to. Itโ€™s loaded with tender orzo, savory sausage, smoky spices, green chiles, and melty cheeseโ€”all made in one pot in about 30 minutes.

Itโ€™s cozy, a little bold, and exactly what you want on a busy night when you still want something that tastes like you actually tried.

Between school, sports, and everything else going on, this is one of those recipes I can throw together fastโ€”and everyone will eat it without complaints. Even better? The leftovers are just as good the next day.

Ingredients

  • 1 lb ground pork sausage (or chicken/turkey sausage)
  • 1 cup uncooked orzo (regular or gluten-free)
  • 1 red bell pepper, finely diced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika (slightly increased for more depth)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Cheese

  • 1 cup shredded cheddar (or Colby Jack / Monterey Jack)

Optional Heat

  • Red pepper flakes or a splash of hot sauce

Toppings

  • Chopped cilantro
  • Avocado slices
  • Sour cream
  • Extra shredded cheese

Instructions

  1. Brown the sausage
    Heat 1 tablespoon olive oil in a large pot over medium-high heat.
    Add the sausage and cook, breaking it up, until browned and fully cooked. Remove and set aside.

Donโ€™t drain the greaseโ€”it adds flavor to the whole dish.


  1. Build the flavor base
    In the same pot, add the remaining tablespoon of olive oil.
    Add onion and red pepper, and cook for 3โ€“4 minutes until softened.

Stir in cumin, chili powder, paprika, salt, and pepper. Let the spices cook for about 30 seconds to bring out their flavor.


  1. Add garlic + orzo
    Stir in the garlic and cook for 1 minute.

Add the uncooked orzo and toast it for another minuteโ€”this adds a little extra depth.


  1. Simmer
    Pour in chicken broth and add the green chiles.
    Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10โ€“12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

  1. Finish it off
    Return the sausage to the pot.
    Stir in the cheese until melted and creamy.

Taste and adjust seasoning if needed.


  1. Serve
    Top with cilantro, avocado, sour cream, or extra cheese.

Easy Variations

  • Protein: Swap sausage for chicken or steak
  • Vegetarian: Use black beans + add mushrooms or spinach
  • Cheese: Use whatever melts well (pepper jack = extra flavor)
  • Spice: Add hot sauce or salsa for more kick

Storage

Store leftovers in an airtight container in the fridge for up to 3 days.

To reheat, warm on the stove or in the microwave. Add a splash of chicken broth to loosen it back upโ€”it thickens as it sits.

Ingredients
  

  • 1 cup shredded cheddar cheese
  • 1 lb ground sausage uncooked
  • 1 cup orzo pasta uncooked
  • 1 4 oz can
  • 1 red pepper finely diced
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • ยฝ teaspoon chili powder
  • ยผ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Instructions
 

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add the sausage to the skillet, breaking it up with a spoon, and once cooked, take it out of the pan and set aside.
  • In the same skillet, add 1 tbsp olive oil until until warm. Add the diced onion, paprika, chili powder, cumin, and red pepper and stir together making sure the seasonings are well combined with peppers. Cook on medium low until the peppers soften, about 3-4 minutes.
  • Add the minced garlic and cook for another minute
  • Stir in the uncooked orzo pasta, diced green chilies, and chicken broth, salt and black pepper. Bring the mixture to a boil.
  • Once boiling, reduce the heat to medium and cover the skillet. Let it simmer for 12-15 minutes, or until the orzo is cooked and most of the liquid is absorbed, stirring occasionally.
  • Once the orzo is cooked, return the sausage to the skillet and then stir in the cheese until melted.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve the Green Chili Sausage Orzo skillet hot, garnished with optional toppings like chopped cilantro, avocado slices, shredded cheese, and sour cream.

    I didnโ€™t see in the where it says to add the dry herbs, salsa or shredded cheese
