Refried beans are simmered with taco sauce and fresh onions and layered on top of Mexican rice, guacamole, sour cream, chopped fresh tomatoes, cheese and shredded lettuce. These tasty 7 layers are packed into a tortilla to create the ultimate copycat Taco Bell 7 Layer Burrito. Just because Taco Bell discontinued the fan-favorite 7 layer burrito, doesn’t mean we can’t enjoy this handheld twist on the classic 7 layer dip. Let’s get cooking!

Copycat Taco Bell 7 Layer Burrito
This copycat Taco Bell 7 Layer Burrito captures all the flavors of Taco Bell's fan-favorite handheld version of the classic 7 layer dip.
Ingredients
- 1 cup Basmati rice
- 1 tablespoon olive oil
- 1-2 tablespoons taco seasoning
- ¼ teaspoon salt
- 16 ounce can of refried beans
- ½ cup taco sauce Taco Bell brand if it's available
- â…“ cup onion finely chopped
- 8 ounces sour cream
- 8 ounces prepared store-bought guacamole or 2 smashed avocados with 1/4 teaspoon salt and 1/8 teaspoon black pepper
- 8 ounces Mexican cheese blend shredded
- 2 medium-sized tomatoes chopped
- 4 ounces shredded lettuce
- 6 large burrito flour tortillas To make this recipe gluten free use a gluten free tortilla like Mission Foods Original Tortilla Wraps
Instructions
- Prepare the rice by adding the rice, oil and taco seasoning along with two cups of water to a medium pan. Bring to a boil, cover and reduce heat to low for 16-18 minutes or until rice is cooked.
- Add the can of refried beans to a medium pan. Add two tablespoons of water, taco sauce and onions and stir to combine. Heat on medium until throughly heated, stirring occasionally.
- Microwave the stack of tortillas on a microwave-safe plate for 30 seconds.
- To assemble the burritos, layer beans, rice, sour cream, guacamole, shredded cheese, tomatoes and lettuce in each tortilla. Fold in the sides of the burrito and wrap tightly.
- If you choose to grill your burrito, spray it lightly with cooking spray and heat each side in a pan on medium heat until the tortilla is golden brown. This step is optional.

This copycat Taco Bell 7 layer burrito recipe is a classic. Try these variations for the remix.
- Cheese – Shredded Mexican cheese blend is the classic choice. This blend is a mixture of cheeses that are commonly used in Mexican dishes such as Monterey jack, Cheddar cheese, Asadero and Queso Quesadilla. Shredded cheddar (white or yellow) or shredded Monterey Jack cheese or pepper jack are also delicious in this copycat Taco Bell 7 Layer Burrito. For an extra creamy texture, skip the shredded cheese and add about 1/4 cup creamy nacho cheese to each burrito.
- Beans – Swap out the refried beans for a can of drained and rinsed black beans. Use a potato masher to give them a rough mash before simmering with the taco sauce and chopped onions.
- Meat-lovers – Swap out the beans for a pound of ground beef, ground turkey or ground chicken or load up on protein and add the beef or turkey in addition to the beans.
- Bring the heat – Add chopped jalapeño to the burrito for a spicy kick! Keep the ribs/membranes in for extra heat and remove them for less heat.
- Fresh herbs – For a fresh, Mexican flavor add about a teaspoon of chopped fresh cilantro to each burrito.

- Gluten Free – The only ingredient in these 7 layer burritos with gluten is the tortilla. I typically substitute flour tortillas for corn tortillas but in this case, corn tortillas just aren’t big enough to hold all 7 ingredients. Most grocery stores carry a gluten free soft tortilla with a consistency similar to a regular flour tortilla and enough space to hold the ingredients. - Vegan – This recipe is already vegetarian but to make it vegan, simply skip the cheese and the sour cream or substitute it with vegan shredded cheese and vegan sour cream. With all of the other delicious layers of ingredients, our vegan friends and family won’t miss a thing!
