This Jalapeno Chicken Recipe is the perfect recipe for a busy weeknight dinner. It only takes 15 minutes to prep. and the slow cooker does the rest!
Ingredients in Creamy Hot Jalapeno Crockpot Chicken
- 1 lb boneless skinless chicken breasts
- 1 cup Cream cheese – softened
- 2 cloves Garlic or 1 tsp garlic powder
- 1 tsp Cumin
- 1/2 cup White onion
- 2 cups Chicken Broth
- 1 cup Buttermilk (or one cup milk with 1 tbsp vinegar, allow to sit 5 minutes)
- 7 oz can Pickled Jalapeno peppers chopped without stems (if there are carrots and onions in it, you can toss those in too)

- 1/2 cup Green Salsa Verde
- 2 Yellow, Orange or Red Peppers sliced thinly
- Cilantro – Chopped without the stems
- Hot Sauce – optional
- Salt & Pepper
- Optional – top with cheddar cheese and sour cream
Instructions for Creamy Hot Jalapeno CrockPot Chicken
- Pour buttermilk into a shallow dish, add chicken, and let it sit for 5 minutes, flipping onto the other side in between
- Remove the chicken from the dish and lay it on the bottom of a crockpot, pouring the chicken broth over the top
- Place the cream cheese on top and then add the salsa verde
- Add peppers, onion, hot sauce, jalapeno peppers, onion, garlic, salt, pepper, and cumin and mix all ingredients together

- Cover and cook on high for 2 hours or low for 4 hours
- Shred chicken and add a couple dash of hot sauce (optional)
- Garnish with chopped cilantro
Serve over rice or wrapped in flour tortillas
