Thanksgiving Casserole

Chicken is smothered in a creamy, cheesy sauce and covered in savory stuffing. With Thanksgiving just a few weeks away, I’m craving that warm and cozy Thanksgiving dinner and this super simple Thanksgiving Casserole delivers big Thanksgiving flavor with only 10 minutes of prep. Whip up my Instant Pot Thanksgiving Mashed Potatoes while this casserole bakes and just an hour you have a delicious thanksgiving feast that tastes like you’ve been cooking all day!

Garnish with any traditional Thanksgiving herb. My favorite is rosemary.

Ingredients
  

  • 1 lb chicken thighs or chicken breasts When I use chicken breasts, I like to slice the breasts horizontally so they're thin and each piece has the perfect ratio of chicken to sauce/stuffing.
  • 6 pieces Swiss cheese
  • 2 10.5 oz cans cream of chicken or cream of mushroom soup To make this recipe gluten free, I use Pacific Foods soups
  • ¼ cup white wine or white cooking wine
  • 6 oz box Stovetop Stuffing To make this dish gluten free use Alexia Gluten Free Savory Stuffing. Mix the stuffing with the spice packet before adding it to the casserole.

Instructions
 

  • Preheat oven to 350 degrees.
  • Lightly spray a glass casserole dish with cooking spray.
  • Arrange the chicken on the bottom of the dish.
  • Cover the chicken with an even layer of the cheese slices. The 6 slices should just about cover the entire casserole dish.
  • Mix the soup with the wine and spread it over the cheese slices, covering the entire casserole dish.
  • Layer the stuffing over the top of the soup mixture and press it firming into the soup mixture. If you're using Alexia stuffing, mix the stuffing and the spice packet prior to adding it to the casserole.
  • Pour the melted butter over the top of the casserole.
  • Cover with foil and bake for 1 hour.

Thanksgiving…party of just a few?

This Thanksgiving casserole takes only 10 minutes to prepare thanks to good old cream of chicken soup (or cream of mushroom soup) and Stovetop stuffing. For my fellow gluten intolerant or gluten sensitive foodies, Alexia Gluten Free Savory Stuffing is just as tasty with zero gluten. Simply combine the spice packet with the stuffing and there you have it…an easy and delicious gluten-free substitute to our favorite boxed stuffing.

Gluten free stuffing casserole for turkey day

I cut gluten out of my diet over 10 years ago and I’ve searched high and low for the best gluten free alternatives, so when I drop a GF recommendation…you should know that I don’t take it lightly. This stuffing mix doesn’t disappoint when prepared properly. On Thanksgiving, I prepare this casserole without the chicken for the perfect stuffing side dish. I add 1/2 cup of chicken broth in addition to the cup of milk and the result is a really delicious stuffing casserole that may in fact disappear faster than the traditional “gluttonous” stuffing.

How to make Thanksgiving Casserole
