Variations for 15-minute Chocolate Chip Crunch Protein Balls
Substitute peanut butter for other nut butter or seed butter like cashew butter or almond butter or sunflower seed butter
Gluten-free – use gluten-free oats – I like Bobs Red Mill
Sprinkle a bit of sea salt on top
Chocolate – Dip them in melted chocolate, or sprinkle melted chocolate on top
Add flax seeds or other seeds
Ingredients
- 2.5 cups rolled oats (not instant) – for gluten free I use Bobs RedMill
- 1 cup + 2 tbsp creamy peanut butter – I like to use Skippy natural peanut butter
- 3/4 cup maple syrup
- 1/2 cup honey
- 1/2 cup protein powder – I use Orgain Simple
- 2 tbs chia seeds
- 1/2 cup mini dark chocolate chips
- 1/2 cup shredded unsweetened coconut
- Optional Chocolate Drizzle
- 1 cup chocolate chips
- 1 tsp coconut oil
How to Make Chocolate Chip Protein Balls
- In a large bowl, stir the oats and peanut butter until well blended, then add the shredded coconut.
- Stir in the honey and mix in well, then add mix in the maple syrup
- Add the protein powder, ensuring it gets fully combined with the oat mixture.
- Fold in the chia seeds and chocolate chips.
- Roll the peanut butter oat mixture into 2-inch balls and place on a large baking sheet lined with parchment paper.
- Place the chocolate chips in a small bowl with 1 tsp coconut oil and microwave at 30-second intervals until melted.
- Drizzle over the tops of the energy balls.
- Place in the freezer for 15 minutes or until chocolate dries.
Storage
Keep in an airtight container in the refrigerator for a week or in the freezer for up to a month.

My protein powder does not come with a scoop, can you provide another measurement for that ingredient?
