Slow Cooker Apple Ginger Glazed Beef Recipe

Jump to Recipe Print Recipe

Slow Cooker Apple Ginger Beef is one of those easy dinners that’s perfect for busy weeknights! Tender chuck roast cooks low and slow in a sweet and savory sauce made with apple juice, fresh ginger, honey, garlic, and soy sauce. The result is flavorful, fall-apart beef that’s delicious served over rice, mashed potatoes, or noodles.

I love a good crockpot recipe, especially when I can throw everything together in the morning and have dinner practically ready by the end of the day. The apple adds just a touch of sweetness without overpowering the ginger and garlic, and the sauce is so good you’ll want to spoon it over everything!

Why You’ll Love This Slow Cooker Apple Ginger Beef

  • Easy to prepare: Just a few minutes of prep before everything goes into the slow cooker.
  • Sweet and savory: Apple juice, honey, ginger, garlic, and soy sauce create a delicious combination of flavors.
  • Perfect for busy days: Let the beef cook low and slow while you go about your day.
  • Great for family dinners: Three pounds of chuck roast makes four generous servings.
  • Versatile: Serve over rice, mashed potatoes, or noodles, or use the shredded beef in sandwiches.

Ingredients You’ll Need

Boneless chuck roast: I recommend using 3 pounds of boneless chuck roast. It’s ideal for slow cooking because the connective tissue breaks down over time, making the beef tender and easy to shred.

Apple juice: Adds a mild, fruity sweetness to the sauce without making it taste overly sweet.

Fresh ginger: Gives the beef a warm, slightly spicy flavor that balances the sweetness of the honey and apple juice.

Garlic: Fresh minced garlic adds plenty of savory flavor.

Honey: Helps create a sweet and savory sauce that coats the shredded beef.

Soy sauce: Adds saltiness and depth of flavor. I prefer low-sodium soy sauce so the sauce doesn’t become too salty as it cooks.

Beef broth: Provides additional moisture and richness.

Apple cider vinegar: A little acidity balances the sweetness of the honey and apple juice.

Tomato paste: Adds richness and helps round out the sauce.

Smoked paprika and black pepper: Add a subtle smoky flavor and a little warmth.

Sesame oil: Optional, but adds a nice nutty flavor.

How to Make Slow Cooker Apple Ginger Beef

Step 1: Prepare the beef

Trim any large pieces of excess fat from the chuck roast, but leave some marbling for flavor and tenderness.

Place the roast in a 6-quart slow cooker.

Step 2: Make the apple ginger sauce

In a medium bowl, whisk together the beef broth, water, apple juice, honey, soy sauce, minced garlic, fresh ginger, apple cider vinegar, tomato paste, smoked paprika, black pepper, and sesame oil, if using.

Pour the sauce over the chuck roast.

Step 3: Slow cook the beef

Cover and cook on LOW for 8–10 hours or HIGH for 5–7 hours, until the beef is tender enough to pull apart easily with two forks.

I recommend cooking on LOW whenever possible. Chuck roast needs time for the connective tissue to break down, and the slower cooking process generally produces more tender results.

Step 4: Shred the beef

Remove the beef from the slow cooker and shred it using two forks. Discard any large pieces of fat.

Return the shredded beef to the slow cooker and stir it into the cooking juices.

Step 5: Thicken the sauce (optional)

If you prefer a thicker sauce, whisk together 1 tablespoon cornstarch and 2 tablespoons cold water.

Stir the mixture into the hot cooking liquid and cook on HIGH for another 10–20 minutes, or until the sauce thickens.

Serve warm with your favorite sides.

Tips for Tender Slow Cooker Chuck Roast

Use the right cut of beef

Chuck roast is my first choice for this recipe because it has enough marbling and connective tissue to become tender during slow cooking. Leaner cuts can dry out and won’t shred as easily.

Start with enough beef

One thing to keep in mind is that chuck roast shrinks quite a bit as it cooks. A 3-pound roast will typically yield around 1.8–2.25 pounds of cooked beef, depending on the amount of fat and moisture lost.

That’s why I recommend starting with 3 pounds when serving four people. You’ll have enough for generous portions without worrying about the beef cooking down too much.

Don’t rush the cooking process

If your beef seems tough after several hours, it may simply need more time. Chuck roast can reach a safe internal temperature long before it becomes tender enough to shred.

Keep cooking until a fork slides into the meat easily and the beef pulls apart without resistance.

Keep the cooking juices

Don’t discard the liquid left in the slow cooker! It’s full of flavor from the beef, apple juice, ginger, and garlic.

Once the beef is shredded, return it to the sauce so it absorbs some of those delicious flavors.

Use fresh ginger

Freshly grated ginger has a brighter flavor than ground ginger and works especially well with the apple juice and honey.

What to Serve with Apple Ginger Beef

This beef is delicious with just about any side dish, but here are a few of my favorites:

  • Steamed rice: Perfect for soaking up the sweet and savory sauce.
  • Mashed potatoes: A comforting option that pairs beautifully with tender shredded beef.
  • Egg noodles: Toss the noodles with some of the cooking liquid for an easy dinner.
  • Roasted broccoli: Adds a little freshness and balances the richness of the beef.
  • Roasted carrots: Their natural sweetness complements the apple and ginger flavors.

Slow Cooker Apple Ginger Beef FAQs

Why is my slow cooker beef tough?

If your chuck roast is tough and won’t shred, it probably needs more cooking time. Chuck roast contains connective tissue that takes several hours to break down.

Continue cooking and check it periodically until the beef pulls apart easily with a fork. Make sure there’s enough liquid in the slow cooker to prevent the sauce from drying out.

How much chuck roast do I need for four people?

I recommend 3 pounds of boneless chuck roast for four generous servings. Beef loses moisture and fat during cooking, so starting with a larger roast helps ensure you have enough.

Can I use apple cider instead of apple juice?

Yes! Unsweetened apple cider works well in this recipe and gives the sauce a slightly richer apple flavor.

Can I make this recipe ahead of time?

Absolutely! This is a great make-ahead meal because the beef can be stored in its sauce and reheated when you’re ready to eat.

Can I cook the beef on HIGH instead of LOW?

Yes, but I prefer cooking chuck roast on LOW for the most tender results. If you’re short on time, cook on HIGH for approximately 5–7 hours, checking for tenderness rather than relying on the clock alone.

How to Store and Reheat Leftover Beef

Store leftovers in an airtight container with some of the cooking liquid in the refrigerator for up to 3–4 days.

You can also freeze the cooked beef and sauce for up to 3 months for best quality.
