Dill flavors take center stage
My super simple oven-fried pickle recipe is one of my favorite easy appetizers. I wanted to switch-it-up a bit and create a dip version of the recipe. When I searched for recipes online, most of them use a packet of ranch seasoning, and while I love ranch (who doesn’t?), I want the traditional dill pickle flavor to take center stage. Plus, most of the recipes toast the breadcrumbs in a skillet before topping the dip and that’s an extra step (and an extra pan to wash). This recipe simplifies the process.
This dill pickle dip is amazing on burgers
Nothing says Summer BBQ like the flavors of a dill pickle. Not only is this dip a delicious appetizer, but it doubles as an amazing spread on burgers or veggie burgers.
To make a dill pickle burger spread, mix the cream cheese, mayonnaise, shredded cheese and chopped dill pickles in a bowl. Spread about a tablespoon of the mixture on each burger during the last couple of minutes they’re on the grill. You’ll get the cheesy, dill flavors of a loaded burger and you’ll never worry about those pickle slices slipping out of the bun when you take a bite!
The best pickles for this gluten free pickle dip
Any dill pickle slices will work for this gluten free pickle dip recipe, but my absolute favorite is Grillo’s. These fresh, crisp pickle slices use simple garden-fresh ingredients like fresh dill. They’re made cold and sold cold so they maintain a fresh homemade taste and consistency. Plus, they’re made with clean ingredients and no added preservatives. Once you’ve eaten all of the pickle slices, don’t throw away that tasty Grillo’s pickle brine. Here are a few ways that I like to use it.
- Cocktails Replace the olive brine in your martini with pickle juice and garnish with a few pickle slices or a spear to create a pickle martini.
- Salad Dressings Add a “dill iousious” twist (sorry – I couldn’t resist) to store-bought ranch dressing by adding pickle juice. Start with a small amount and add more to taste.
- Snacks Pop a thinly sliced cucumber or a few hard boiled eggs into the leftover brine and allow them to marinate for at least 24 hours in the refrigerator, to infuse them with delicious dill flavor.
What to serve with this gluten free pickle dip
- Tortilla chips – This is my favorite! Perfect amount of salt, perfect amount of crunch. Plus, they’re naturally gluten free.
- Ridged or wavy potato chips – Regular potato chips don’t hold up to heavy dips and no one likes broken potato chips in the dip!
- Gluten free crackers
- Gluten free Pretzels or gluten free pretzel chips – Snack Factory’s gluten free pretzel chips are delicious!
- For a healthier option, serve this pickle dip with fresh veggies like celery sticks, carrot sticks or baby carrots.

Gluten Free Pickle Dip
Ingredients
- 8 ounces cream cheese room temperature
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese or shredded Mexican blend cheese
- 1 ½ cups chopped dill pickles
- 3 tablespoons unsalted butter melted
- ⅔ cup gluten free breadcrumbs or gluten free panko breadcrumbs or crispy quinoa (directions are in the notes section)
- ½ teaspoon salt
Instructions
- Combine the cream cheese, mayonnaise, shredded cheese and chopped pickles in a bowl. Stir to combine.
- Pour the mixture into a small baking dish and bake for 25 minutes at 375 degrees. Remove the dip and increase the heat to 400 degrees while you prepare the topping.
- Prepare the topping by mixing the melted butter, breadcrumbs and salt in a small bowl.
- Evenly spread the topping on the dip. Bake at 400 degrees for 10 minutes or until the top is golden brown.
