Strawberry Almond Mint Quinoa Salad is loaded with crunchy quinoa, juicy strawberries, salted almonds, and fresh mint, tossed in a light honey maple vinaigrette. It’s the perfect blend of flavors and a great refreshing summer salad for every occasion!
One of my favorite things about summer is all of the delicious in-season fruits. We have a strawberry patch in my yard, so there is always an abundance of fresh, ripe strawberries. While I love using them in my baking recipes, like strawberry buttercream cake, I also love using them in savory dishes. Strawberries add sweetness to the savory quinoa and salted nuts, and the honey maple dressing pulls it all together.
Simple and Nutritious Ingredients
Strawberries – loads of vitamin C and antioxidants
Olive oil – healthy source of fat
Almonds – whole of healthy fats, fiber and protein
Quinoa – good source of plant-based protein and fiber (also a great gluten-free option)
Strawberry Almond Mint Quinoa Salad
- 2 cups cooked quinoa
- 1/2 cup fresh strawberries (chopped into small pieces)
- 2 tbs chopped almonds
- 1/4 cup finely chopped fresh mint leaves
- DRESSING
- 2 tbsps extra virgin olive oil
- 1 tsp Honey
- 1 tbsp Balsamic Vinegar
- 1/2 clove garlic (or 1/2 tsp minced)
- 1/2 tsp maple syrup
- Salt and Black Pepper (to taste)
- 1 tsp lemon juice
Instructions
- Cook quinoa according to directions and fluff with a fork, then place in a large bowl
- Stir in the dressing until evenly coated
- Toss in the strawberries, mint, and crushed almonds
- Dressing
- Put all of the ingredients in one bowl and whisk with a fork until they are fully blended
Storing Strawberry Almond Mint Quinoa Salad
Keep in an airtight container in the refrigerator for 2-3 days. Add some fresh mint to the top of leftovers.
