Frozen Chocolate Berry Cream Loaf

A cool, creamy no-bake delight, this Frozen Chocolate Berry Cream Loaf layers a crisp vanilla wafer crust with luscious whipped chocolate-berry filling for an irresistibly easy frozen treat. It’s the perfect summer dessert when you don’t want to turn on the oven!

This no-bake cake hides a frozen chocolate berry surprise

One slice, and you’ll see why this no-bake dessert everyone will rave about — with its crispy cookie base, silky berry-chocolate cream with fresh berries, and a frosty finish that melts in your mouth like a dream.

Ingredients in Frozen Chocolate Berry Cream Loaf

CRUST

  • 3 tbsp melted butter
  • ½ cups vanilla wafer cookie crumbs (about 40 wafers). I use Nilla Wafers
  • ¼ cup granulated sugar

FILLING

  • 1 (14-ounce) can sweetened condensed milk
  • ⅔ cup chocolate syrup
  • ½ cup strawberry/cherry purée (instructions below)
  • 2 cups (1 pint) heavy whipping cream, whipped (do not use nondairy topping)
  • 1/2 cup chocolate chips

BERRY PUREE

  • 1.5 cups chopped strawberries
  • 1 cup chopped cherries
  • 1 tbsp lemon juice
  • 2 tablespoons sugar

  1. In a small saucepan, combine fruit, sugar, and lemon juice.
  2. Bring to a boil and then reduce to medium heat for 10–15 minutes, stirring often, until thick and jammy. There will be still be some hunks of fruit.
  3. Remove from the heat and cool completely

🥄 Instructions:

  1. Line a loaf pan with aluminum foil or parchment part extending over the sides. Lightly butter or spray the foil or parchment
  2. Combine cookie crumbs, sugar, and melted butter. Press firmly into the bottom of the loaf pan
  3. In a large bowl, whisk together sweetened condensed milk, chocolate syrup, and cooled berry purée.
  4. Pour heavy whipping cream into the bowl of a stand mixer, and using the whisk attachment, or an electric mixer on medium speed for 4-5 until light an fluffy and starts to form stiff peaks
  5. Gently fold in the whipped cream until smooth and fully combined.
  6. Pour the mixture into the prepared cookie layer crust. Smooth the top.
  7. Sprinkle the chocolate chips evenly over the filling
  8. Cover and freeze for at least 6 hours or until firm.

Serve: Lift out using foil. Peel off foil, slice, and serve. Garnish with extra berries or a drizzle of chocolate sauce if desired.

  • 2 cups 1 pint heavy whipping cream, whipped (do not use non dairy topping)
  • ½ cup chocolate chips
  • BERRY PUREE
  • 1.5 cups chopped strawberries and 1 cup chopped cherries
  • 2 tbsp tablespoons sugar

Instructions
 

  • PUREE:
  • In a small saucepan, combine fruit, sugar, and lemon juice.
  • Cook over medium heat for 10–15 minutes, stirring often, until thick and jammy.
  • Remove from stove an allow to completely cool
  • Line a loaf pan with aluminum foil or parchment paper, extending it over the sides. Lightly butter or spray the foil or parchment paper.
  • CRUST
  • Combine cookie crumbs, sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of the pan
  • FILLING
  • In a large bowl, whisk together sweetened condensed milk and the chocolate syrup, .
  • Pour the heavy cream into the bowl of a stand mixer with the whisk attachment, for 4-5 minutes until light and fluffy and starts to have peaks
  • Gently fold in the whipped cream and strawberry puree until smooth and fully combined.
  • Pour filling into prepared crust. Smooth the top
  • Sprinkle on chocolate chips evenly over the top
  • Cover and freeze for at least 4 hours or until firm.
  • Lift out using foil, and allow to defrost for 5 minutes. Peel off foil, slice, and serve.
