Sautéed onions, bell peppers, mushrooms and kielbasa are combined with pizza sauce and mozzarella cheese and topped with delicious and naturally gluten-free Brazilian cheese bread. Packed with extra cheese and the perfect amount of crisp from the Brazilian cheesy bread, this Gluten Free Pizza Casserole takes pizza to the next level.

Gluten Free Pizza Casserole
Ingredients
- 1 tablespoon oil
- red bell pepper sliced thin
- green bell pepper sliced thin
- 8 oz fresh button or cremini mushrooms sliced
- 12 oz kielbasa sliced thin. You could traditional sausage or pepperoni instead.
- 13 oz Pizza sauce I recommend Raos homemade pizza sauce. Raos has mastered the taste of homemade sauces, in a jar!
- 8 oz shredded mozzarella cheese
- 11.5 oz package of Cheddar and Parmesan Brazi Bites or if you're not making this recipe gluten-free, you can use Pillsbury Grands Biscuits. If you're use the Pillsbury Grands Biscuits, cut each biscuit into 4 smaller pieces before topping the casserole.
- ½ cup shredded cheddar cheese optional
Instructions
- Preheat the oven to 400 degrees. If you're uinsg Pillsbury Grands Biscuits, preheat the oven temperature to 375.
- Sauté the bell peppers and onions for about 3-4 minutes. Add the kielbasa and mushrooms and sauté for 2-3 additional minutes.
- Turn off the heat and add the pizza sauce and shredded mozzarella cheese.
- Pour the toppings/sauce/cheese mixture into a pie pan.
- Place the Brazi Bites or biscuit pieces on top of the toppings/sauce/cheese mixture, spacing them out to ensure each serving includes a few bread bites.
- Sprinkle the cheddar cheese on the top of the pie and bake for 20 minutes.
Pao de queijo (Brazilian cheese bread)
Pao de queijo (Brazilian cheese bread) is made with tapioca flour or sour cassava flour (so it’s gluten-free) and a Brazilian cheese called “minas” which is difficult to find in the United States. The recipes for Brazilian cheese bread online use a variety of cheeses and honestly, every single one that I’ve tried tastes amazing! Making your own Brazilian cheese bread is fun and it’s tastes delicious, but this recipe uses a short cut to keep it simple. Brazi Bites are frozen Brazilian cheese bread bites that can be found in most grocery stores. Simply open the package and pop them in the oven (or on our Gluten Free Pizza Casserole) and they’re ready in just about 20 minutes. Easy Peasy.
Switch it up
This recipe is versatile and works with pretty much any variation of pizza toppings. While Kielbasa isn’t a traditional pizza topping, I find that the flavors work really well with peppers and onions. Feel free to use traditional pepperoni or sausage instead. For veggie lovers, skip the kielbasa and fill this pizza bake with bell peppers, onions, mushrooms, olives and artichoke hearts.
Bring back the Priazzo!
This Gluten Free Pizza Casserole was inspired by an old Pizza Hut menu item that was discontinued back in the early 90’s called Priazzo. Anyone remember that delicious dish?!?! It was basically a deep dish pizza pie packed with toppings. My family loved it, so once it was discontinued my mom recreated it and I have to say…her version was better than the original. I grew up with my Mom’s version of Priazzo in our regular dinner rotation and it’s a dish that I’ve missed so much since eliminating gluten from my diet 10+ years ago. I’ve tried to make the dish with gluten-free pizza crust but was not able to find one that would stretch across the top of the pie pan to create the top crust so the dough would kind of dissolve into the sauce. Brazilian cheese bread has a soft center, but the outside is thick and crispy enough to hold up to the sauce. Sure…it doesn’t look like a pie, but who cares? The taste is Priazzo perfection!
